Here’s my honest system after all these years: I pick two hands-off slow cooker meals for our busiest nights, one 30-minute skillet dinner, one casserole I can prep ahead, and one soup that guarantees leftovers for lunch. Add a bagged salad or one of my easy summer salad recipes on the side, and dinner’s handled before the week even starts.
