Everything is better in a bowl, right? I think so! And these Chicken Enchilada Bowls are my latest obsession! And the best part…they come together in no time using SEEDS OF CHANGE™!
That’s right! I used SEEDS OF CHANGE™’s Quinoa and Brown Rice with Garlic, Taco Roasted Chipotle Simmer Sauce, and their Savory Mexican Style Black Beans with Corn and Peppers that I picked up at Jewel-Osco to make this amazing dish! It’s so easy!

How to make Chicken Enchilada Bowls
Want to make your very own Chicken Enchilada Bowls at home? Here’s how!
Ingredients:
- 1lb Chicken
- SEEDS OF CHANGE™ Quinoa Brown Rice with Garlic
- SEEDS OF CHANGE™ Taco Roasted Chipotle Simmer Sauce
- SEEDS OF CHANGE™ Savory Mexican Style Black Beans with Corn and Peppers
- Tomatoes – diced
- Avocados – sliced
- Cilantro
- Limes
Directions:
- In a dutch oven or large skillet, brown 1lb of chicken. Cook until no longer pink.
- Remove from heat and shred the chicken with two forks.
- Return to the pan and add in one package of SEEDS OF CHANGE™ Taco Roasted Chipotle Sauce.
- Simmer for 10 minutes.
- Heat the SEEDS OF CHANGE™ Quinoa Brown Rice with Garlic and SEEDS OF CHANGE™ Savory Mexican Style Black Beans with Corn and Peppers in the microwave for 90 seconds each (as directed on the package)
- Next, assemble the bowls by adding all of the ingredients as pictured above.
