How to Make Lemon Baked Chicken Thighs One-Skillet Meal

Ingredients

  • bone-in, skin-on chicken thighs – I use skin-on thighs because I enjoy the texture. It makes a crispy skin.
  • olive oil – You could also use coconut oil as well.
  • salt and freshly ground black pepper – to taste.
  • Yukon Gold potatoes – cut into 1-inch pieces
  • lemon, sliced into medium slices
  • garlic, peeled
  • parsley (optional – added on top after baked)
  • salt + pepper to taste

Directions:

  1. Preheat oven to 425 degrees F
  2. Pat dry your chicken thighs with a paper towel and season on both sides with salt and pepper.
  3. In a cast-iron skillet, add olive oil. (you can use a baking dish or a large baking pan if you don’t have a skillet)
  4.  Add the chicken thighs,  potatoes, lemon slices, and garlic to the skillet.
  5. Toss everything together to coat well with olive oil.
  6. Add the skillet to the oven and bake for 35-40 minutes – until a meat thermometer reads 160 degrees.
  7. Remove from the oven and allow to cool for 5-10 minutes before serving with a side salad.
  8. Top with parsley if desired!
