The Best Easy Breakfast Casserole Recipe

You just need to keep a few simple ingredients on hand to whip this baby up anytime you need a dose of comfort! It’s also the perfect breakfast to whip up on Sunday and enjoy during the week with just a little microwave action.

Recipe Ingredients:

  • Sausage – I like spicy breakfast sausage for this recipe, but mild is good if you have littles in your house.
  • Eggs – whisked together
  • Shredded Cheese – I like cheddar but you can use your favorite
  • Frozen Hashbrowns – you can use hashbrown potatoes or shredded.
  • Milk – whole milk is best.

Substitutions:

  • Breakfast Meat: Ham, bacon, or turkey sausage would be perfect!
  • Potatoes: tater tots or shredded hashbrowns would be fine to use.
  • Cheese: Colby Jack, Pepper Jack, Swiss cheese, or Monterey Jack are good substitutions for the casserole.
  • Milk: Mix it up! Add half and half or heavy cream in place of 1 cup of milk.
  • Veggies: mix in mushrooms, bell peppers, onions, broccoli or spinach.

How To Make Breakfast Casserole:

  1. Prepare: Preheat the oven to 350 degrees.
  2. Brown the Sausage: Crumble sausage into a skillet on the stove and brown completely. Remove from heat.
  3. Whisk the Eggs: In a large bowl, mix eggs and milk together and whisk well.
  4. Add seasonings: Add salt and pepper to the egg mixture and stir.
  5. Mix ingredients all together: To a 9×13 dish sprayed with cooking spray, add frozen hashbrowns, sausage, and cheese.
  6. Add to the baking dish: Pour the egg/milk mixture into the dish.
  7. Bake: Bake at 350 degrees for 45 minutes – covered with foil.
  8. Rest: Remove the foil and bake for about 10-15 minutes more until the dish is bubbly and cheese is melted.

  • 1 pound Sausage
  • 6 Eggs
  • 2 cups Milk
  • 1 teaspoon salt

  • 1/2 package Frozen Hashbrowns 15oz
  • 2 cups Cheddar Cheese shredded – I like cheddar but you can use your favorite

    I got a little nervous after I put this in the oven and started reading comments. I fully expected a soupy mess but it was quite the contrary, I used bacon instead of sausage and followed the recipe exactly. I did add a few seasonings garlic and onion powder salt and pepper. I have a gas oven and baked it accordingly. My family cleaned their plates and throughly enjoyed brunch today. Thanks for the recipe

    This is a good recipe but it calls for way too much milk. I didnโ€™t think two cups sounded right but I went with it anyways. When my casserole was now is looked good on top but when I cut into it it was all soup. So I spooned out the extra juices and put it back in for another 30 min. Hopefully the eggs will cook without burning everything else. Next time I will try one cup.

    I made two of these casseroles. I used frozen diced potatoes and put them in the refrig the night before. In the 1st casserole, I sauteed cut-up pork sausage links and diced onions and it cooked in the time suggested and was very good.
    The 2nd casserole had diced ham that I first warmed in the microwave and drained the excess liquid. This ham version took about 25 minutes more time to cook and I increased the temp to 360 degrees once I took the other casserole out of the oven. Next time I will add more seasoning since the potatoes didn’t really absorb any flavors.

    Even with the updated cooking times I still had to cook for over 1 ยฝ hours. However, we were patient and waited for it to cook properly and it was delicious.

      Did you start with a cold dish? Frozen ingredients? Lower temp? All ovens are different so times could change.

    Haven’t tasted it yet but the recipe should be updated with at least cooking in the oven at 400-425ยฐ for an hour or so . Very disappointing, I would have set aside more time for this.

    Great! I made this without any potatoes (dad can’t eat them. I used 10 eggs, and a mixture of milk and half & half, plus I added some finely diced mushrooms. After reading the comments on cook time, I increased the oven temp to 400 degrees and cooked for 45 mins. It was perfect! It was juicy and not dry (I think this can happen with too many potatoes). Dad and hubby love it! Thanks!! Will definitely make again!
