Copycat Starbucks Bacon & Gruyere Sous Vide Egg Bites
The only thing that makes eggs better than they already are is when you add things to them and one of my favorite pairings with eggs is bacon and cheese.
OH yeah! You cannot go wrong when you add bacon and cheese to your eggs. Bacon is life! I mean, is there any dish that doesn’t go with bacon?
Lately, I’ve been really loving the new Starbucks Sous Vide Egg Bites. They are DELICIOUS and pretty good for you. Depending on how you make them, they’re low carb and Keto, too!
After I work out I will run through the cafe and grab a latte and an order of Bacon Gruyere Egg Bites. Heaven! But the only bad thing is that they are pretty darn expensive. I am going to need to back off OR make my own. So, I’m making my own!
I know to make true Sous Vide Egg Bites you need a special machine, or you can make them in the oven. But, I thought I’d pull out my pressure cooker and give it another use – BREAKFAST! And, boy am I glad I did!
These Instant Pot Sous Bacon and Gruyere Egg Bites are to die for! AND they take no time at all to make!
Ingredients to make Starbucks Egg Bites:
- Bacon
- Eggs
- Cottage cheese โ See these cottage cheese substitutes if needed.
- Gruyere cheese
How to Make Instant Pot Sous Vide Bacon & Gruyere Egg Bites:
1. Blend
Blend together the eggs, cottage cheese, and cheese in a blender until all incorporated. I believe it’s under 30 seconds to have it all mixed well.
2. Add
Add cooked bacon strips to the inside of a silicone mold and a little cheese.
3. Pour
Pour the egg mixture into the silicone mold evenly.
4. Cover
Cover the egg mold tightly with aluminum foil.
5. Add
Add the trivet that came with your pressure cooker right into the pot with 1 cup of water.
6. Lower
Lower the silicone mold into the instant pot and cover with the lid with the steam valve closed.
7. Cook
Set the pressure cooker to Steam for 10 minutes. When the timer goes off, manually release the steam and carefully open the lid when there is no more steam present.
8. Remove
Remove the silicone mold from the instant pot (carefully – it will be hot!) and uncover. Remove the Egg Bites from the molds and enjoy!
Variations
If you have a sous vide machine, that works great, too!
You can also change up the flavors of the cheese by adding Monterey jack cheese or cheddar cheese as well.
If you’re not worried about having these egg bites taste exactly that Starbucks, add in some chopped bell peppers, chopped tomatoes, or even some spinach are broccoli as well!

How do you keep this sous vide egg bites recipe fresh?
If you have a vacuum sealer, I recommend that! This will keep them fresh and you can even meal prep and add them to the freezer for later, too! They’re so easy to freeze!
Are these good for a paleo diet?
They are! They’re low in carbs, calories, salt, and just about everything. You can enjoy these for breakfast, lunch, or dinner, or just when you’re needing a quick burst of protein. You can heat them up a tiny bit in the microwave or enjoy them cold.
How do you keep them from sticking to the silicone egg bite mold?
If you’re worried about them sticking, just use a little bit of cooking spray and that should prevent them from sticking at all.

Can I use the oven don’t have silicone mold
Yes! We recommend steaming water in the oven ahead of time. Then, bake the egg bites in a muffin pan at 300 degrees Fahrenheit for about 20 to 25 minutes or until the eggs are set.
How much Gruyere cheese does it call for?
Seems the ratio of eggs to bacon is somewhat wide. 1 pack of bacon to only 4 eggs? Other recipes call for more eggs to bacon

One of my favorite egg recipes! Gruyere cheese provides such a creamy, deliciousness to them. But I also like to switch it up with a flavorful Gouda or such. My favorite has been maple bacon gouda!

Put on steam setting for 10 minutes and they came out uncooked (not at all cooked in center). Other recipes Iโve found say high pressure for 8 minutes + 5 minutes for cooling before release. Trying that next.

You donโt have an amount on the cheese. Just wondering if you use the a 6 oz bag ? I too have an addiction to those egg bites along with my ice coffee! my husband said I should invest into that coffee place because I spend a whole Lotta money there! Lol
