Baked Lemon Chicken Thighs & Potatoes

  • 6 bone-in skin-on chicken thighs
  • 1/4 cup olive oil
  • salt and freshly ground black pepper
  • Yukon Gold potatoes cut into 1-inch pieces
  • 1 lemon sliced into medium slices
  • 5 cloves garlic peeled
  • ¼ cup parsley optional
  • salt + pepper to taste


  • Preheat oven to 425 degrees F
  • Pat dry your chicken thighs with a paper towel and season on both sides with salt and pepper.
  • In a cast-iron skillet, add olive oil. (you can use a baking dish or a large baking pan if you don’t have a skillet)
  • Add the chicken thighs, potatoes, lemon slices, and garlic to the skillet.
  • Toss everything together to coat well with olive oil.
  • Add the skillet to the oven and bake for 35-40 minutes – until a meat thermometer reads 160 degrees.
  • Remove from the oven and allow to cool for 5-10 minutes before serves with a side salad.
