Baked Lemon Chicken Thighs & Potatoes

- 6 bone-in skin-on chicken thighs
- 1/4 cup olive oil
- salt and freshly ground black pepper
- Yukon Gold potatoes cut into 1-inch pieces
- 1 lemon sliced into medium slices
- 5 cloves garlic peeled
- ¼ cup parsley optional
- salt + pepper to taste
Preheat oven to 425 degrees F
Pat dry your chicken thighs with a paper towel and season on both sides with salt and pepper.
In a cast-iron skillet, add olive oil. (you can use a baking dish or a large baking pan if you don’t have a skillet)
Add the chicken thighs, potatoes, lemon slices, and garlic to the skillet.
Toss everything together to coat well with olive oil.
Add the skillet to the oven and bake for 35-40 minutes – until a meat thermometer reads 160 degrees.
Remove from the oven and allow to cool for 5-10 minutes before serves with a side salad.
