- flour – regular flour is best for this recipe

Can I save extra waffle mix ? If yes for how long ?
I make waffles every Sunday but usually use a mix, as I haven’t previously found the results to be worth the extra effort of making them from scratch. Today, I was out of waffle mix, so I found this recipe and decided to give it a try. These were easy to make and absolutely delicious! They tasted SO much better than a mix – well worth the few extra steps. I followed the recipe exactly with the exception of mixing entirely by hand, including beating the eggs with a wire whisk (just didn’t feel like digging out the hand mixer). They turned out perfectly and the whole family loved them. I think I’ll be ditching the mix!

My husband begs for these waffles theyโre so good and I use 1-1 flour to make them gluten free.
Tastes of metal due to teaspoons of baking powder
Unfortunately, I did not sift the baking powder into the flour. My waffles had very unsavory small baking powder lumps in them. Also, directions call for less stirring which also contributed. Made double batch for gifting but would not give to anyone. Did have nice flavor.
