You can whip up strawberry pancakes anytime, but making homemade waffles takes a little bit more time. Unless you have one of those fancy waffle makers that makes a bunch of waffles at once, you have to wait for each waffle to cook one-by-one. So waffles, to me, are always best for lazy weekend mornings when we have no place to go or for special occasions.

This strawberry waffle recipe is one I make every year for Valentine’s Day, for spring birthdays, and even sometimes on the Fourth of July. And while they do take a little patience to cook, the good news is that they are super easy! In fact, making waffle batter is no more complicated than making batter for your favorite pancake recipe!

Fluffy Strawberry Waffle Recipe

You might be surprised to learn that homemade strawberry waffles only take a few minutes to make. All you need to do is mix up some fluffy waffle batter, chop some strawberries, and then cook the mixture in your waffle maker. Yes, these waffles are great for special occasions, but if you have a waffle maker that cooks a few at once, they are easy enough to make on a school day morning. 

I like to use fresh chopped strawberries in my waffles. Fresh fruit really makes a big difference in flavor. I also mix my strawberries right into the waffle batter. You will find lots of strawberry waffle recipes that simply put strawberries on top, but that just isn’t enough to make drool-worth waffles. You really need warm, strawberry pieces inside each piece of waffle. That’s what makes this recipe so amazing!

  • Flour – Regular, all-purpose flour is perfect for this waffle recipe. If your flour looks lumpy, give it a quick sift before making your homemade waffle batter. This will help you achieve a light, airy texture.
  • Brown sugar – Light brown sugar is perfect for the waffles and adds just a hint of molasses sweetness. 
  • Baking powder
  • Whole milk
  • Eggs
  • Melted butter – I use salted butter for this recipe to add a little bit extra flavor, but unsalted will be just fine. 
  • Vanilla extract
  • Strawberries – I like to use fresh chopped strawberries. Frozen berries can turn the waffle batter a grey color, but fresh berries do not. Fresh is best in the case of strawberry waffles! 


  • Replace the flour with a gluten-free flour blend to make tasty, homemade gluten-free strawberry waffles. 
  • Use almond extract in place of vanilla for delicious almond strawberry waffles. 
  • Use a mix of freshly chopped strawberries and fresh raspberries to make pretty pink Valentine’s day waffles.

How to Make Strawberry Waffles

  1. Heat the waffle iron: Start by turning on your waffle iron and heating it up according to the manufacturer’s directions. Every waffle machine is different, but most take a few minutes to get nice and hot. 
  2. Mix the dry ingredients: Mix the flour, brown sugar, and baking powder together in a medium-sized bowl. Try to break up any lumps of flour or sugar as you whisk. 
  3. Add the wet ingredients: Whisk in the milk, eggs, melted butter, and vanilla. The batter will be thick but smooth. 
  4. Flour the strawberries: Toss the strawberries with 3 tablespoons of flour, dusting them completely. This will help prevent the berries from sinking in the batter and also keep the batter a nice, light color.
  5. Cook the waffles: Scoop the waffle batter into the hot waffle iron, close the top, and cook. When the waffles are done, they will easily pull away from the waffle maker and be a beautiful golden brown. Most waffle irons will cook these strawberry waffles within 3-5 minutes. 
  6. Top the waffles: Add some whipped cream, extra chopped strawberries, and some maple syrup to create the perfect strawberry waffle.

Quick Tip

If you need to use frozen strawberries, chop them up and mix them in while frozen. If the berries are still frozen, they will not turn the batter gray; that said, they may still be a bit cold even after the waffle is done cooking, and they’ll also be harder to chop.

How to Store Strawberry Waffles

If you have extra strawberry waffles, you can wrap them tightly in plastic wrap and store them in the fridge for 3-4 days. Pop the waffles in the toaster oven for 1-2 minutes to reheat. You can also reheat waffles in the microwave, heating them for about 30 seconds. However, the toaster method keeps them crisp.

You can also freeze strawberry waffles for up to 2 months. Thaw the frozen waffles in the microwave for 30 seconds, then reheat the rest of the way in the toaster oven, making them crispy on the outside and soft in the center. 


How do you cut strawberries for waffles?

I like to dice the strawberries into small pieces. This ensures you will get strawberries in every bite of waffle. Place the berry on a cutting board and cut it into four vertical pieces. Cut each of those slices in quarters and then into quarters again to make very small strawberry bites.

Should you let waffle batter rest?

Letting the waffle batter rest will help thicken the waffle batter. This will make the waffles chewier and a little dense. However, it is not required to make good waffles. If you are anxious to get cooking right away, you definitely can!

Is it better to use oil or butter for waffles?

Butter is definitely better to make waffles. It gives the waffles a richer taste and helps them turn golden brown.

  • 2 cups flour (plus 3 tablespoons for berries)
  • 1 Tablespoon light brown sugar
  • 4 teaspoons baking powder
  • 1 1/2 cups whole milk
  • 2 eggs
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 cup diced strawberries


  • Preheat your waffle iron according to the manufacturer's directions.
  • In a medium sized bowl, whisk together the two cups of flour, light brown sugar, and baking powder.
    2 cups flour (plus 3 tablespoons for berries), 1 Tablespoon light brown sugar, 4 teaspoons baking powder
  • Add the whole milk, eggs, melted butter, and vanilla extract to the bowl and whisk to make a smooth, thick batter.

  • In a separate small bowl, toss the diced strawberries with the extra 3 Tbsp of flour. Then, gently fold the floured berries into the waffle batter, stirring them in just a bit. Try not to overmix or the juice from the berries can turn the batter pink.

  • Open your hot waffle iron and spray it with a little cooking spray or grease the waffle iron with some butter.
  • Scoop about 1 cup of waffle batter into your waffle iron, close it up and cook until the waffle is golden brown. The amount of batter and cooking time will depend on your specific waffle maker so be sure to check your directions!
  • Serve the warm strawberry waffle with syrup, whipped cream or extra fruit on top!

    Delicious! I made these for my 3 daughters this morning with homemade whipped cream. My middle girl is the pickiest kid ever so she was the only one I was nervous about but she gave them two thumbs up! They are great with toppings or by themselves.
