The Best Mexican Ground Beef Recipes

1. Burrito Casserole

Burrito casserole is one of my favorite Mexican ground beef recipes for many reasons. First, it only takes about 20 minutes to make, so it is perfect for busy weeknights. I also love that it is a filling, hearty meal that is big enough to serve the whole family. Everyone can grab a slice of burrito casserole and the meal is complete!

2. Cheesy Taco Sticks

If you love Mexican ground beef and you also love mozzarella sticks, then this is the recipe for you. Cheesy taco sticks are a delicious, handheld appetizer that can easily be turned into a complete dinner. You are going to want to eat quite a few!

The recipe starts with Mexican-style ground beef. This is a great way to use up any leftover taco meat you may have in the fridge already. The juicy beef is rolled with cheddar cheese sticks inside Pillsbury pizza crust. You then bake the rolls until golden brown, when they are ready to dip in guacamole and eat!

3. Taco Ring

A taco ring is a perfect appetizer that no one can resist. It is quick to make, big enough for about eight people, and looks really pretty on a buffet table. I have made this taco ring for parties and as a fun meal for my family.

The taco-seasoned ground beef is mixed with cream cheese, making it extra juicy and flavorful. You then spread the seasoned meat across crescent roll dough, rolled into a ring, and bake. Serve your taco ring with sour cream, guacamole, or a side of queso dip. Any of your favorite taco toppings and dips will work!

4. Walking Tacos

You don’t have to visit your local fair to enjoy a walking taco. With my easy recipe, you can make it at home! I like to make walking tacos when I host parties. My guests can grab a bag and then enjoy a meal as they walk around and socialize. It’s the perfect carefree way to serve dinner, while still being super tasty.

These taco stuffed shells are the perfect combination of Italian food and Mexican-inspired food. Tender pasta shells are packed with zesty seasoned ground beef. I also pack refried beans, corn, salsa, and shredded cheese to the shells, making them very similar to tacos.

One batch of taco stuffed shells is enough to serve a big family. I also like to make the whole recipe and then freeze it for later. Next time you are craving a Mexican ground beef meal, just pull out the tray of shells, heat it up, and enjoy!

6. Dorito Taco Salad

Dorito taco salad is one of my favorite ground beef lunch recipes. It is a little bit nutritious with all the veggies that go into the bowl, but still very exciting thanks to the crunchy Doritos. Mexican seasoned ground beef makes the salad hearty and super filling.

7. Cheesy Beef Enchiladas

Cheesy beef enchiladas are one of my go-to recipes when I want a Mexican-style beef dish. This recipe is better than any restaurant enchiladas I have ever had. They are also completely customizable so you can make cheesy enchiladas exactly how you like them.

The Mexican ground beef in this recipe uses a mix of seasonings, adding flavor to the meat from scratch. However, you can use a packet of taco seasoning to make the recipe even easier. One packet of taco seasoning will make the meat juicy and delicious.

Tips for Making Perfect Taco Meat

You’ll need to brown ground beef with taco seasoning before making any of these recipes. (PS – Here’s how long ground beef lasts in the fridge.) These tips will help you make sure it turns out perfect:

  1. Use a non-stick skillet and make sure it’s hot before adding the meat; this will help with preventing sticking.
  2. Break up the ground beef into small pieces as you add it to the pan. This helps with even cooking.
  3. Don’t overcook! Ground beef should be cooked just until it’s no longer pink.
  4. Cook in batches if you’re making enough for a large group, as overcrowding the pan can cause uneven cooking and reduce overall quality.
  5. Drain any excess fat before using the ground beef in your taco recipes. This helps prevent the tacos from becoming too greasy.
  6. And finally, don’t hesitate to make it your own! Add cayenne for a kick, stir in sliced green onions for color, or swap the beef for ground turkey.

Authentic Mexican Ground Beef Recipes

All of the recipes on my list highlight the yummy taste of Mexican ground beef. Some recipes use Mexican ground beef seasoning packets, while others use a custom blend of spices to flavor the meat. A few of the recipes are perfect for making with leftover taco meat which is great for the day after Taco Tuesday.

No matter which Mexican ground beef recipe you choose, I know you will love it. They are all just soooo good! Let me know which you try and which recipes you love. Enjoy!
