Everything Bagel Breakfast Casserole Recipe

Just when you thought nothing could be better than an everything bagel, we’re giving you this everything bagel casserole recipe! It has all the savory flavor you love with the addition of eggs and veggies to keep you full.

Ready with minimal prep time in just over an hour, it’s perfect for feeding a crowd. Even better, leftovers store well so you can have a nutritious breakfast in minutes throughout the week!

Serve it on its own, or pair it with a side of million dollar bacon or fruit salad for a satisfying breakfast spread.

Ingredients for Everything Bagel Breakfast Casserole

  • 1 tablespoon butter 
  • 1/2 pound breakfast sausage – I like to remove the casings from the breakfast sausage. Then, I chop it up as it cooks, turning it into crumbles. This ensures all the flavor soaks into the bagel pieces, and you get a bite of juicy sausage in every bite. 
  • 2 everything bagels – If your bagels are small, you may need one or two extra. You want about four cups of chopped bagel pieces. 
  • 3 cups whole milk – Skim milk, almond milk, or even oat milk will work, too. You can even use heavy cream for a more decadent casserole. 
  • 8 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 1/2 cups baby spinach – I like to use organic baby spinach which is nice and small. No chopping is needed!
  • 1 1/3 cup shredded cheddar cheese – For the best taste and texture buy a block of cheddar, and shred it yourself.
  • 1/2 pound cream cheese – Use full-fat brick-style varieties, not cream cheese from a tub, for the best results.
  • 1 teaspoon everything bagel seasoning – Feel free to adjust the seasoning to taste.

Variations:

  • Use breakfast bacon or turkey bacon in place of breakfast sausage. Cook the bacon then chop it into small, bite-sized pieces. 
  • Use plain bagels in place of everything bagels. Then, simply double the everything bagel seasoning in the recipe to get the same, powerful flavor. 
  • Replace the cheddar cheese with shredded gruyère cheese, swiss cheese, feta cheese, or some grated parmesan cheese. A cheese blend will also work well! 
  • Use egg whites in place of whole eggs for a healthier bagel egg casserole. You will need 14 egg whites to replace the eight eggs in this recipe. 
  • Use gluten-free bagels to make this a perfect gluten-free breakfast

How to Make Everything Bagel Breakfast Casserole

  1. Prepare: Preheat the oven to 350ºF, and grease a 9×13 baking dish.
  2. Melt the butter: Add the butter to a large skillet over medium-high heat, letting it melt completely.
  3. Cook the sausage: Add the sausage to the pan, and cook for about five minutes, chopping it into pieces with a wooden spoon. Then, remove the sausage from the pan, and set it aside.
  4. Combine the ingredients: Whisk the milk, eggs, salt, and pepper in a large bowl. Stir in the cooked sausage, one cup of shredded cheese, and spinach. Add the chopped bagels, coating them completely.
  5. Layer: Pour the egg mixture into the prepared baking dish. Dot the top of the casserole with cream cheese. Then, sprinkle the everything bagel seasoning and remaining cheese on top.
  6. Bake: Cover the dish with foil, and bake for 45 minutes. Uncover the pan, and continue to bake for 15 minutes or until the cheese is melted and beginning to brown. Enjoy!

Serving Suggestions:

You can easily serve this everything bagel casserole recipe on its own as a complete meal. Or, pair it with a side of sausage, fresh fruit, or a green goddess smoothie. Then, don’t forget to add a dalgona coffee or your favorite latte!

How to Store + Reheat

  • Wrap the casserole dish with plastic wrap, and store it in the fridge for up to three days.
  • To freeze, wrap the casserole with plastic wrap followed by aluminum foil. It will stay fresh in the freezer for up to two months. Thaw in the fridge overnight before serving.
  • To serve, reheat your casserole in the oven at 350 degrees Fahrenheit for 15 to 20 minutes or until warm.

Ingredients

Instructions 

  • Preheat your oven to 350ºF. Grease a 9×13 baking dish and set aside.

  • Add the sausage to the hot pan and cook for about 5 minutes, chopping the sausage into small pieces as it cooks using a wooden spoon or rubber spatula.

  • Remove the sausage from the pan and set aside.
  • Cut the bagels into small, ½ inch pieces.

  • In a large bowl, whisk together the milk, eggs, salt, and pepper. Stir the cooked sausage, 1 cup of the shredded cheese and spinach into the egg mix.
    3 cups whole milk, 8 eggs, 1/2 teaspoon salt, 1/4 teaspoon ground black pepper, 1 1/2 cups baby spinach, 1 1/3 cup shredded cheddar cheese
  • Stir the chopped bagel into the egg mix then pour the mix into the greased baking pan.
  • Dot the top of the casserole dish with the pieces of cream cheese then sprinkle the top with the everything bagel seasoning and the rest of the cheddar cheese.
    1/2 pound cream cheese, cut into small pieces, 1 Tablespoon everything bagel seasoning
  • Cover the dish with foil and bake for 45 minutes. Uncover the pan and continue to bake for 15 more minutes. The cheese will be melted and beginning to brown.
  • Enjoy while warm.

Notes

  • If you only have plain bagels, double the amount of everything bagel seasoning to add more flavor.
