  • 1/2 pound breakfast sausage, casings removed
  • 2 everything bagels
  • 3 cups whole milk
  • 8 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 1/2 cups baby spinach
  • 1 1/3 cup shredded cheddar cheese
  • 1/2 pound cream cheese, cut into small pieces
  • 1 Tablespoon everything bagel seasoning

Instructions

  • Preheat your oven to 350ºF. Grease a 9x13 baking dish and set aside.
  • Add the butter to a large skillet and melt over medium high heat.
    1 Tablespoon butter
  • Add the sausage to the hot pan and cook for about 5 minutes, chopping the sausage into small pieces as it cooks using a wooden spoon or rubber spatula.
1/2 pound breakfast sausage, casings removed
  • Remove the sausage from the pan and set aside.
  • Cut the bagels into small, ½ inch pieces.
    2 everything bagels
  • In a large bowl, whisk together the milk, eggs, salt, and pepper. Stir the cooked sausage, 1 cup of the shredded cheese and spinach into the egg mix.
3 cups whole milk, 8 eggs, 1/2 teaspoon salt, 1/4 teaspoon ground black pepper, 1 1/2 cups baby spinach, 1 1/3 cup shredded cheddar cheese
  • Stir the chopped bagel into the egg mix then pour the mix into the greased baking pan.
  • Dot the top of the casserole dish with the pieces of cream cheese then sprinkle the top with the everything bagel seasoning and the rest of the cheddar cheese.
1/2 pound cream cheese, cut into small pieces, 1 Tablespoon everything bagel seasoning
  • Cover the dish with foil and bake for 45 minutes. Uncover the pan and continue to bake for 15 more minutes. The cheese will be melted and beginning to brown.
  • Enjoy while warm.

Notes

  • Use slightly stale bagels: Slightly dry bagels soak up the egg mixture better without becoming mushy.
  • Let it rest before slicing: Allow the casserole to sit for 5–10 minutes after baking for cleaner slices.
  • Make it ahead: Assemble the casserole the night before for an even easier morning.
  • Cover while baking: Covering with foil prevents the top from browning too quickly.
  • Add extra seasoning on top: A little extra everything bagel seasoning after baking adds even more flavor.
