Preheat your oven to 350ºF. Grease a 9x13 baking dish and set aside.
Add the butter to a large skillet and melt over medium high heat.

Add the sausage to the hot pan and cook for about 5 minutes, chopping the sausage into small pieces as it cooks using a wooden spoon or rubber spatula.

Remove the sausage from the pan and set aside.
Cut the bagels into small, ½ inch pieces.

In a large bowl, whisk together the milk, eggs, salt, and pepper. Stir the cooked sausage, 1 cup of the shredded cheese and spinach into the egg mix.
3 cups whole milk, 8 eggs, 1/2 teaspoon salt, 1/4 teaspoon ground black pepper, 1 1/2 cups baby spinach, 1 1/3 cup shredded cheddar cheese
Stir the chopped bagel into the egg mix then pour the mix into the greased baking pan.
Dot the top of the casserole dish with the pieces of cream cheese then sprinkle the top with the everything bagel seasoning and the rest of the cheddar cheese.

Cover the dish with foil and bake for 45 minutes. Uncover the pan and continue to bake for 15 more minutes. The cheese will be melted and beginning to brown.
