I’ve got to admit, this sausage breakfast casserole has become my secret weapon during a busy school morning. Everyone digs into this fluffy breakfast casserole, and it makes grabbing a healthy and filling breakfast before the day so easy. It lets me ditch prepping scrambled or over-easy eggs with sausage on the side and make one dish that everyone agrees on!
One of my favorite parts about this breakfast casserole is that it combines everyone’s favorite breakfast ingredients into one dish. Eggs, sausage, veggies, and cheese go into a big baking dish, and the oven does the rest of the work. While this dish is a weekday favorite, I love to make it for brunch and Christmas morning, too!

- Olive oil
- Red bell pepper – I like to use red bell peppers for this recipe, but if you prefer yellow, orange, or green, you can swap them out.
- Pork sausage – If you don’t like pork sausage, feel free to use your favorite breakfast sausage.
- Green onions
- Eggs
- Sour cream – I recommend using a full-fat sour cream for a rich flavor.
- Whole milk – Any type of milk can be substituted if needed.
- Salt
- Ground black pepper
- Cheddar cheese – Sharp and mild cheese are both fine to use.
Directions For How To Make Sausage Breakfast Casserole
Step 1. Gather your ingredients and prepare the oven to 350 degrees. Grease a 9×13-inch baking dish with cooking spray and set to the side.
Step 2. In a large skillet, saute the bell peppers in olive oil over medium heat. Then, add in the breakfast sausage and cook until browned.
Step 3. Chop the sausage with a wooden spoon to break it into small pieces. Stir in the green onions and pour the sausage into the baking dish.
Step 4. Whisk together the eggs, sour cream, milk, salt, pepper, and cheese.
Step 5. Pour the egg mixture over the sausage mixture into the prepared casserole dish.
Step 6. Bake the casserole for about 40 minutes until the center is set and no longer jiggly.
Variations
- Add more vegetables to the breakfast casserole. Mushrooms, spinach, corn, black beans, and onions are all great choices.
- Make the casserole dairy-free. Swap out the milk and sour cream for your favorite dairy-free alternative.
- Make the casserole spicy. Add jalapeรฑos, spicy sausage, or any other hot pepper to the dish.
Tips for Success
- If the top of the casserole starts to brown before the eggs are fully cooked, cover the dish with aluminum foil. This will allow the dish to continue cooking without burning the top.
- Let the sausage breakfast casserole fully cool when it comes out of the oven if you are not serving it immediately.
- Thoroughly whisk the egg mixture before you pour it into the baking dish. If the eggs are not fully scrambled, you’ll have pockets of whites and yolks.

Storage and Reheating
- To Store: Store any leftover breakfast casserole in an airtight container for up to 5 days in the fridge.
- To Freeze: The casserole can be frozen whole or in slices for up to 3 months. Wrap the casserole dish in plastic wrap or use a disposable casserole dish to bake it and then freeze it whole.
- To Reheat: To reheat leftover casserole, warm it in the oven or reheat it in the microwave for 30-second increments. For a whole frozen casserole, let it thaw overnight and then reheat it in the oven.

- 9×13 inch baking dish

Ingredients
- 1 Tablespoon olive oil
- 1 red bell pepper, diced
- 2 pounds pork sausage
- 1/2 cup chopped green onions
- 12 eggs
- 1/2 cup sour cream
- 1 cup whole milk
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 cups shredded cheddar cheese
Instructions
- Preheat your oven to 350 degrees F. Grease a 9×13 baking dish with cooking spray.
- Add the olive oil to a large skillet and heat over medium-high heat. Add the bell peppers to the skillet and saute for 3-4 minutes to soften the peppers. Add the ground sausage to the skillet with the peppers and cook for about 10 minutes or until the sausage is no longer pink and has browned.
- Chop the sausage up with a wooden spoon as it cooks to make small crumbles. Stir in the green onions. Pour the cooked sausage into the prepared baking dish.
- In a large bowl, whisk together the eggs, sour cream, milk, salt, pepper, and cheese. Pour the egg mix into the casserole dish over the peppers and sausage.
- Bake the casserole for about 40 minutes. The center will be set, and the casserole will no longer be jiggly. Slice and serve while hot!
Notes
- Add extra veggies if desired. Mushrooms, corn, jalapenos, and black beans are all good choices. Mix the veggies into the cooked sausage.
- Any kind of milk can be used. Unsweetened almond milk works well, and evaporated milk, in place of whole milk, adds a nice sweetness.ย
