- 1 tablespoon olive oil
- 1 red bell pepper diced
- 2 pounds pork sausage
- ½ cup chopped green onions
- 12 eggs
- ½ cup sour cream
- 1 cup whole milk
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 2 cups shredded cheddar cheese
Preheat your oven to 350 degrees F. Grease a 9x13 baking dish with cooking spray.
Add the olive oil to a large skillet and heat over medium-high heat. Add the bell peppers to the skillet and saute for 3-4 minutes to soften the peppers. Add the ground sausage to the skillet with the peppers and cook for about 10 minutes or until the sausage is no longer pink and has browned.
Chop the sausage up with a wooden spoon as it cooks to make small crumbles. Stir in the green onions. Pour the cooked sausage into the prepared baking dish.
In a large bowl, whisk together the eggs, sour cream, milk, salt, pepper, and cheese. Pour the egg mix into the casserole dish over the peppers and sausage.
Bake the casserole for about 40 minutes. The center will be set, and the casserole will no longer be jiggly. Slice and serve while hot!
- Keep the top from burning: If the top of the casserole starts to brown before the eggs are fully cooked, cover the dish with aluminum foil. This will allow the dish to continue cooking without burning the top.
- Cool before storing: Let the sausage breakfast casserole fully cool when it comes out of the oven if you are not serving it immediately.
- Mix the eggs well: Thoroughly whisk the egg mixture before you pour it into the baking dish. If the eggs are not fully scrambled, you'll have pockets of whites and yolks.
