Ingredients to make homemade Popeyes biscuit recipe.
  • 2 teaspoons salt – Omit this ingredient when using salted butter.
  • 2 cups flour – Use cake flour or all-purpose flour. Cake flour will result in lighter and fluffier biscuits while all-purpose flour will create a drier biscuit texture.
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup cold, unsalted butter
  • 3/4 cup buttermilk – You can make homemade buttermilk by combining 1 tablespoon of white vinegar or lemon juice with a cup of regular milk for every cup of buttermilk required.
  • 3 tablespoons melted butter

Variations

  • Sour cream is a great substitute for buttermilk as the acid in the sour cream activates the baking powder and soda, much like buttermilk.
  • Use this buttermilk biscuit recipe as a base for other types of biscuits (sweet or savory), such as blueberry biscuits, cheesy biscuits, 7UP Biscuits, or when making Homemade Biscuits and Gravy.
  • Make gluten-free biscuits by using gluten-free flour, such as Bob’s Red Mill.
  • Make larger-sized biscuits with a 5-inch biscuit cutter. Keep in mind that this will require additional baking time.
  • If you don’t have a biscuit cutter, grease a muffin tray, and add the dough to the individual muffin cups. This will help shape the biscuits as they bake to recreate a round look.

Directions for How to Make Popeyes Biscuits

  1. Prepare: Preheat your oven to 400 degrees Fahrenheit. Then, spray a baking sheet with cooking spray, and set it aside.
  2. Combine the dry ingredients: Whisk the flour, salt, baking powder, and baking soda in a large bowl.
  3. Add the butter: Place the butter in the bowl of dry ingredients. Then, use a pastry cutter or your hands to cut the butter into the mixture. It will resemble small, pea-sized pieces. Work quickly so the butter stays cold!
  4. Add the wet ingredients: Stir in the buttermilk. The dough will be crumbly but hold its shape in a ball.
  5. Knead: Transfer the biscuit dough to a floured surface, and use your hands to knead it two to three times.
  6. Stir in the buttermilk: The dough should be crumbly but stick together in a ball.
  7. Knead: Turn the dough onto a floured surface and use your hands to knead it 2-3 times. You want the dough to be uniform and smooth, but try not to knead so much that the dough becomes tough!
  8. Cut the biscuits: Pat the dough until it is 1/2 inch thick. Then, use a 4-inch biscuit cutter to cut the dough into six biscuits. Gather the dough back into a ball, and repeat the process, rolling out the dough, to get two more biscuits.
  9. Bake: Arrange the dough on the prepared baking sheet. Bake for 13-14 minutes or until the tops are golden brown and the biscuits are puffed up.
  10. Top: Brush the tops of your Popeyes biscuits with the melted butter, and enjoy warm!

How to Store + Freese Popeyes Biscuits

  • Store leftover Popeyes biscuits in an airtight container at room temperature for a few days or in the fridge for up to five days.
  • Freeze the cooled biscuits in an airtight container or sealable bag for up to three months.
  • Thaw in the fridge overnight or at room temperature. Then, reheat in the oven or microwave, covered with a damp paper towel to prevent the biscuits from drying out.

Quick Tip

To ensure tender, light biscuits, don’t overmix the dough! Stop mixing as soon as the dough holds together. The cubed butter must also be cold when rubbed into the flour. This creates pockets of air in the dough, creating the flaky texture we love.
