Preheat your oven to 400ºF, Spray a baking sheet tray with cooking spray and set aside.
Add the flour, salt, baking powder, and baking soda to a large mixing bowl and whisk together.
2 teaspoons salt, 2 cups flour, 1 ½ teaspoons baking powder, ½ teaspoon baking soda
Add the cold chopped butter and use a pastry cutter or your hands to rub the butter into the dry mix until the butter is broken into small, pea-sized pieces. If using your hands, mix quickly so the butter stays cold.
½ cup cold butter
Stir in the buttermilk. The dough should be crumbly but stick together in a ball.
¾ cup buttermilk
Turn the dough onto a floured surface and use your hands to knead it 2-3 times. You want the dough to be uniform and smooth but try not to knead too much or the dough can get tough!
Gently pat the dough until it is about ½ inch thick. Use a 4” biscuit cutter to cut the dough into about 6 biscuits. Gather the dough back into a ball and pat it again to get 2 more biscuits out of the dough.
Place the biscuits on the prepared baking tray then bake for 13- 14 minutes. The tops will be golden brown and the biscuits will be puffed up.
Brush the tops of the baked biscuits with the melted butter. Enjoy while warm!
3 Tablespoons melted butter
