Quick and Simple Cool Whip Cake Mix Cookies

Homemade cookies are always a good idea, but sometimes you don’t have all the time to make them entirely from scratch. That’s where this Cool Whip Cake Mix Cookies recipe comes into play.

The cake mix takes away the need to measure out all the individual ingredients! Just add whipped topping, large eggs, and powdered sugar, and your cookies are good to go.

Plus, they turn out extra fluffy and melt in your mouth with every chewy bite. Ready in less than 20 minutes, this recipe is my go-to for last-minute events or when I need something sweet!

Ingredients to make Cool Whip cake mix cookies.
  • 1 (15.25 ounce) box of lemon cake mix – Any brand you like best will work!
  • 2 cups Cool Whip, thawed
  • 1 egg – Let it come to room temperature for easy mixing.
  • 1/2 cup powdered sugar

Variations

  • Switch up the cake mix flavor to make a different flavor of cookies. Try strawberry, chocolate, red velvet, or yellow cake mix cookies.
  • Mix chocolate chips, sprinkles, or chopped nuts into the batter.
  • Create a cookie sandwich and add more Cool Whip or frosting, like cream cheese frosting, in the middle of two cookies.ย 

Directions for How to Make Cake Mix Brownies

  1. Prepare: Preheat your oven to 350 degrees Fahrenheit. Then, line a baking sheet with parchment paper or a silicone baking mat.
  2. Combine the ingredients: Add the cake mix, Cool Whip, and egg to a medium bowl. Stir just until no streaks remain.
  3. Portion: Use a tablespoon-sized cooking scoop to portion the batter, and scoop it into a bowl of powdered sugar. Roll one cookie at a time, coating it with the sugar. Then, transfer it to the prepared baking sheet.
  4. Repeat: Continue the process, using all the dough, and rolling the cookies in sugar. Space them about 1 1/2 inches apart on the baking sheet.
  5. Bake: Transfer the cookies to the oven. Bake for eight minutes or until they no longer look wet around the edges and are lightly golden brown.
  6. Cool: Allow the cookies to cool on the pan slightly. Then, transfer them to a wire rack to cool completely, and enjoy!

  • Sandwich a scoop of ice cream between two cookies to create an ice cream sandwich.

How to Store + Freeze

  • Store the Cool Whip Cake Mix Cookies in an airtight container at room temperature for three to four days.
  • You can also freeze the cookies in an airtight container or freezer-safe bag for up to two to three months.
  • Thaw in the fridge or at room temperature when you’re ready to eat.

Quick Tip

Freeze the cookie dough if you don’t want to bake all of the cookies at once. Skip rolling the cookie dough balls in powdered sugar and instead stick them right in the freezer. When you are ready to bake them, let the dough thaw and roll them in powdered sugar before placing them in the oven to bake.

  • Cookie scoop
  • Baking sheet tray
  • Parchment paper or silicone baking mat
  • Rubber spatula

Ingredients  

  • 1 box ย (15.25 ounces) lemon cake mix
  • 2 cups Cool Whip, thawed
  • 1 egg
  • 1/2 cup powdered sugar

Instructions 

  • Preheat your oven to 350 degrees F. Prepare a baking sheet tray with parchment paper or a silicon baking mat and set the tray aside.
  • In a medium-sized bowl, mix the lemon cake mix, Cool Whip, and egg together. Stir well to make a smooth batter.
    1 box ย (15.25 ounces) lemon cake mix, 2 cups Cool Whip, thawed, 1 egg
  • Place the powdered sugar in a separate bowl.
    1/2 cup powdered sugar
  • Use a tablespoon-sized cookie scoop to scoop the cookie dough into the powdered sugar, scooping one cookie at a time and rolling it in the powdered sugar. Place the sugared cookie dough onto the prepared sheet tray, spacing them about 1 ยฝ inches apart. Repeat with all of the cookie dough.
  • Bake the cookies for 8 minutes. They will no longer look wet and the edges will just be turning golden brown. Cool the cookies on a cooling rack, and then enjoy!
