It’s so hard to believe that my oldest is getting ready to turn 9 years old! WOW! I can’t believe it! I remember when she was just born and I wondered what she would be like as a little girl and I just couldn’t picture it. And here we are – she’s my almost 9 year old that is going on 15! Ella is the sweetest, most tender hearted, God loving little girl. She loves to sing and dance and puts her all into everything she does. One of her favorite things (as is mine!) is to celebrate her birthday! She plans it for months and months and has a countdown to the day. I love this about her and I love to make it special. After all, there isn’t anyone in the world like her and I love to celebrate her life! One of the best ways we start the day is with Birthday Cake Pancakes!
What could be better than cake batter made into pancakes with sprinkles inside and out PLUS a yummy powdered sugar glaze?! Can’t think of much! These Birthday Cake Pancakes are so delicious and are literally cake on a plate – for breakfast!
The kids absolutely flip over these every time I make them and I find myself snacking on them throughout the morning. Eeek! Not good for my waistline but oh so good for my tummy! This recipe makes a ton, so you can freeze the leftovers for a special occasion or a fun treat!

Birthday Cake Pancakes
Ingredients
- 1 box of Yellow cake mix
- 1/4 cup sprinkles
- more for decoration
Instructions
- Mix up 1 box of yellow cake mix as directions state on box
- add 1/4 cup sprinkles and mix gently
- add 1/4 cup of batter to a hot skillet until bubbles form on surface (like making pancakes)
- Flip
- Cook until 2nd side is golden brown
- Serve topped with a powdered sugar and milk glaze and sprinkled with colored sprinkles
