Preheat your waffle iron according to the manufacturer's directions.
In a medium sized bowl, whisk together the two cups of flour, light brown sugar, and baking powder.

Add the whole milk, eggs, melted butter, and vanilla extract to the bowl and whisk to make a smooth, thick batter.

In a separate small bowl, toss the diced strawberries with the extra 3 Tbsp of flour. Then, gently fold the floured berries into the waffle batter, stirring them in just a bit. Try not to overmix or the juice from the berries can turn the batter pink.

Open your hot waffle iron and spray it with a little cooking spray or grease the waffle iron with some butter.
Scoop about 1 cup of waffle batter into your waffle iron, close it up and cook until the waffle is golden brown. The amount of batter and cooking time will depend on your specific waffle maker so be sure to check your directions!
Serve the warm strawberry waffle with syrup, whipped cream or extra fruit on top!
