Ingredients to make strawberry delight dessert.

For the Crust:

  • 1 1/2 cups graham cracker crumbs – If you do not have graham cracker crumbs, you can grind up whole graham crackers. You will need about 14 graham crackers to make 1 1/2 cups of crumbs.
  • 1/4 cup sugar
  • 2 teaspoons vanilla
  • 5 tablespoons melted butter – Unsalted butter works best
  • 10 strawberries – Use fresh strawberries, not frozen

For the Cheesecake Layers:

  • 1 cup heavy whipping cream
  • 16 ounces cream cheese – Use full-fat, brick-style cream cheese. Make sure your cream cheese is at room temperature. Cold cream cheese will make lumps in the batter, while soft cream cheese will blend right in!
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 3 tablespoons dry strawberry Jello – The smaller, 3-ounce box of Jello will be plenty for this recipe!
  • 8 ounces Cool Whip – Any brand of frozen whipped topping will work, but I think Cool Whip has the best flavor.

Variations

  • Use raspberry Jello in place of strawberry and fresh raspberries rather than strawberry slices to make a raspberry delight.
  • Replace the vanilla extract with almond extract for a nutty flavor twist.

Directions for How to Make Strawberry Delight

  1. Prepare the crust: Mix the graham cracker crumbs, sugar, vanilla, and melted butter in a medium mixing bowl. Pour the mixture into an 8×8 baking dish, pressing the crumbs into the bottom of the pan to form an even layer.
  2. Add the strawberries: Layer the strawberries evenly on top of the graham cracker crust. Then, transfer the dish to the freezer for 30 minutes.
  3. Prepare the cheesecake layer: In a large mixing bowl, beat the cream cheese, powdered sugar, vanilla, and lemon juice until smooth. Scrape down the sides of the bowl. Then, continue to beat for three minutes or until the mixture is light and fluffy.
  4. Beat the cream: In a separate bowl, beat the heavy whipping cream on high speed for three minutes or until stiff peaks form.
  5. Combine: Gently fold the whipped heavy cream into the cream cheese mixture. Fold carefully and slowly, stopping as soon as the ingredients combine.
  6. Layer: Scoop half the cream cheese mixture into the baking pan, spreading it over the strawberries. Then, return the dish to the freezer.
  7. Create the strawberry layer: Add the powdered strawberry Jello to the remaining cream cheese mix, folding gently. Scoop the strawberry filling into the pan, spreading it over the cream cheese filling. Freeze again for 20 minutes.
  8. Top: Spread the Cool Whip on top of the strawberry layer. Then, return the strawberry delight to the freezer for at least an hour or until set.
  9. Garnish and serve: Top the dessert with chopped fresh strawberries and graham cracker crumbs, if desired. Slice, and serve frozen.

How to Store Homemade Strawberry Delight

Strawberry delight is best served fresh as the crust tends to become soggy the longer it sits. However, once frozen and set, leftovers will stay fresh in the fridge for up to five days. Cover the dish with aluminum foil, or transfer pieces to an airtight container to keep them fresh!

Quick Tip

Make sure to plan and allow plenty of time for each layer to freeze. Otherwise, all the different layers will combine when you add the layers!

I loved this recipe, howevver is there really supposed to be 1 Tablespoon of lemon juice? It tastes sour to me and not quite as sweet. I’m wondering if it should have been a teaspoon instead? thanks!

Hi Chelsea! 1 tablespoon is correct, but you can always adjust it to suit your preferences. 😊
