Why you’ll love this sausage, egg and cheese breakfast casserole!

I’ve got to admit, this sausage breakfast casserole has become my secret weapon for busy school mornings. It lets me ditch prepping scrambled or over-easy eggs with sausage on the side and puts them together in a single dish!

While I most often meal prep this casserole for those weekday mornings, it’s also a great choice for holiday brunches. There’s very little prep involved and it feeds a crowd!

  • Make-Ahead Friendly: Assemble it the night before and slide it into the oven in the morning. Breakfast magic!
  • Simple and Quick: Everything mixes together quickly so even if you don’t make it ahead of time, you can get it on the table easy peasy.
  • Kid-Approved: Everyone in my family digs in when this is on the breakfast menu. Sometimes, they even go in for seconds! (They also love this Hashbrown Egg Casserole recipe!)
  • Great for Crowds: Serves a full table without extra effort—just bake, slice, and enjoy.

Sausage Breakfast Casserole Ingredients

Ingredients for sausage breakfast casserole, including pork sausage, bell pepper, black pepper, cheddar, eggs, milk, oil, green onions, salt, and sour cream.

See recipe card below this post for ingredient quantities and full instructions:

  • Red bell pepper – I like to use red bell peppers for this recipe, but if you prefer yellow, orange, or green, you can swap them out.
  • Pork sausage – If you don’t like pork sausage, feel free to use your favorite breakfast sausage.
  • Eggs – Here’s the best way to crack an egg.
  • Sour cream – I recommend using a full-fat sour cream for a rich flavor.
  • Whole milk – Any type of milk can be substituted if needed.
  • Cheddar cheese – Sharp or mild cheese are both fine to use.

Variations

  • Add more vegetables. Mushrooms, spinach, or even zucchini are all great choices.
  • Make the casserole dairy-free. Swap out the milk and sour cream for your favorite dairy-free alternative.
  • Give it a spicy kick. Add jalapeños, spicy sausage, or cayenne to the dish.

Serving Suggestions

This sausage breakfast casserole recipe is pretty filling on its own. If you want to serve it with another dish, aim for something light. The casserole can also be served as brunch alongside classic breakfast sides. Here are some of my favorite pairings!

Storage and Reheating

  • Refrigerator: Store any leftover sausage breakfast casserole in an airtight container for up to 5 days in the fridge.
  • Freezer: The casserole can be frozen whole or in slices for up to 3 months. Wrap the casserole dish in plastic wrap or use a disposable casserole dish to bake it and then freeze it whole.
  • To Reheat: To reheat leftover casserole, warm it in a 350ºF oven or reheat it in the microwave for 30-second increments. For a whole frozen casserole, let it thaw overnight and then reheat it in the oven.

Frequently Asked Questions

Can I make this sausage breakfast casserole the night before?

Yes—assemble completely, cover, refrigerate up to 24 hours, then bake.

How do I know when a breakfast casserole is ready?

After 40 minutes, test for doneness in the center. If there’s no jiggle and the internal temperature reaches 165°F, it’s done.

Can I use turkey sausage in this breakfast casserole?

Absolutely. Turkey sausage keeps the dish lighter while still giving great flavor.

Can I double this sausage breakfast casserole recipe?

If you want to make a bigger batch, I recommend baking this in two casserole dishes to keep the casserole from being too thick.

Course: Breakfast
Cuisine: American
Servings: 12 servings
Prep Time: 15 minutes
Cook Time: 40 minutes
Total Time: 55 minutes

Equipment

  • 9×13 inch baking dish
  • whisk
  • Measuring cups
  • Mixing bowls
  • Skillet

Ingredients

  • 1 tablespoon olive oil
  • 1 red bell pepper diced
  • 2 pounds pork sausage
  • ½ cup chopped green onions
  • 12 eggs
  • ½ cup sour cream
  • 1 cup whole milk
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 cups shredded cheddar cheese

Instructions

  • Preheat your oven to 350 degrees F. Grease a 9×13 baking dish with cooking spray.
  • Add the olive oil to a large skillet and heat over medium-high heat. Add the bell peppers to the skillet and saute for 3-4 minutes to soften the peppers. Add the ground sausage to the skillet with the peppers and cook for about 10 minutes or until the sausage is no longer pink and has browned.
  • Chop the sausage up with a wooden spoon as it cooks to make small crumbles. Stir in the green onions. Pour the cooked sausage into the prepared baking dish.
  • In a large bowl, whisk together the eggs, sour cream, milk, salt, pepper, and cheese. Pour the egg mix into the casserole dish over the peppers and sausage.
  • Bake the casserole for about 40 minutes. The center will be set, and the casserole will no longer be jiggly. Slice and serve while hot!

Notes

  • Keep the top from burning: If the top of the casserole starts to brown before the eggs are fully cooked, cover the dish with aluminum foil. This will allow the dish to continue cooking without burning the top.
  • Cool before storing: Let the sausage breakfast casserole fully cool when it comes out of the oven if you are not serving it immediately.
  • Mix the eggs well: Thoroughly whisk the egg mixture before you pour it into the baking dish. If the eggs are not fully scrambled, you’ll have pockets of whites and yolks.
