This Ham and Cheese Breakfast Casserole is so easy to make either in advance or the day of! Made with ham, cheese, bread, eggs, and more is a family favorite comfort food recipe at it’s best!

There’s just something so delicious about the combination of the spices, cheese, and cubed bread that has me lining up and waiting for seconds.

Since this easy breakfast casserole is a huge hit, it’s my go-to weekend breakfast for the kids, a Mother’s Day Brunch, or anytime I have leftover ham to use! (Prefer sausage? Then try my Sausage Hashbrown Breakfast Casserole!)

A Breakfast Casserole Without Potatoes

I really love that this cheesy casserole recipe is a bit different than others. This breakfast casserole doesn’t have any potatoes or hash browns in it at all! (but if you do like potato casseroles, check out our Cheesy Ham and Potato Casserole as well!)

The cubed bread adds a nice texture to it and makes for a hearty forkful every time.

Ingredients Needed:

  • 10 large eggs – I love to use cage-free or farm fresh eggs.
  • 1 c. whole milk – Whole milk is best as it adds creaminess.
  • ½ c. heavy cream
  • 2 tsp. Dijon mustard – Regular mustard can work, too.
  • 1 tsp. garlic powder
  • salt
  • black pepper
  • 4 c. cubed French bread or baguette – Any cubed bread is fine as well.
  • 1/2 lb. ham, chopped
  • 1 1/2 c. shredded cheddar cheese – Mexican cheese blend is good, too!

How To Make Ham and Cheese Breakfast Casserole with Bread

Step 1

Preheat oven to 350°.

Step 2

In a large bowl, whisk together eggs, milk, cream, mustard, and garlic powder and season generously with salt and pepper.

Step 3

Butter a 9″-x-13″ baking dish. Add bread and top with ham and cheddar.

Step 4

Pour egg mixture over the entire dish.

Step 5

Bake until eggs are cooked through and ham is golden, 45 to 55 minutes.

Tips or Variations

  • To make ahead, cover baking dish with aluminum foil and refrigerate at least 4 hours and up to overnight, then bake as directed.
  • If you want to add in potatoes, you can as well just know that it will take longer to cook during this process.

FAQS

Can you freeze breakfast casserole for later?

You can. Just store the casserole in a freezer-safe container and keep it covered. When you’re ready to enjoy, just unthaw in the fridge and reheat.

Can I make this casserole ahead of time and cook it in the morning?

You bet! This is one of my favorite things to do! That way when I wake up in the morning, I just have to pop it in the oven and relax with a cup of coffee. The best!

What toppings go well on egg and cheese casserole?

Toppings are some of my favorite things! Some of my favorite topping choices are:

  • Sour Cream
  • Salsa
  • Diced onions
  • Fresh Cilantro
  • Hot Sauce
  • Hollandaise Sauce (homemade or a packet!)

And the list could go on forever. Whatever you’re comfortable with, you can easily add to the top! Most toppings go perfect with cheese and eggs!
