This Bisquick breakfast casserole recipe is one of my all-time favorite quick breakfast ideas. The casserole starts by cooking ground breakfast sausage with bell pepper and onion. Then, we add hash brown potatoes and mix in some cheddar cheese. You always need cheese in a breakfast casserole!
The best part of this recipe is the Bisquick baking mix that I whisk together with milk, eggs, and a bit of maple syrup. We pour the sweet pancake mix over the savory ingredients to give this breakfast dish the perfect blend of flavors.

- Red bell pepper – Feel free to use red bell pepper, orange bell pepper, or green bell pepper!
- Onion – Provides savory flavor and balances the richness of the casserole.
- Frozen hashbrown potatoes – No need to thaw before mixing.
- Shredded cheddar cheese – For the best results, buy a block of cheese and grate it yourself.
- Bisquick baking mix – Any brand of pancake mix will work. You can even try making your own pancake mix using my homemade pancake mix recipe.
- Eggs – Help bind the casserole together.
- Whole milk – Adds moisture and richness.
- Maple syrup – Use real maple syrup, not imitation syrup.
Variations
- Skip the sausage for a vegetarian breakfast casserole. In this case, I recommend doubling the bell peppers or adding more veggies like sautéd mushrooms or baby spinach.

- Use shredded pepper jack cheese or a Mexican cheese blend in place of the sharp cheddar cheese.
How to Make Bisquick Breakfast Bake

- Cook the sausage: Heat a large skillet over medium-high heat. Add the sausage, pepper, and onion. Cook for about ten minutes, breaking the meat up as it cooks. Continue to cook until the meat is no longer pink and the veggies are soft.

- Finish the filling: Remove the skillet from the heat, and stir in the hash browns and 1 1/2 cups of shredded cheese.

- Transfer to baking dish: Spread the sausage mixture into the casserole dish, spreading it out in an even layer.

- Top and Bake: In a large bowl, whisk the Bisquick mix, eggs, milk, maple syrup, salt, and pepper. Pour the mixture evenly over the casserole filling. Bake for 40 minutes. Sprinkle the remaining 1/2 cup of cheese on top. Return the casserole to the oven, and bake for three to four minutes to melt the cheese.

- This Bisquick breakfast casserole recipe is fantastic on its own. However, it also pairs well with a light, fruity side dish like a tropical smoothie or fruit and grain smoothie bowl.
- Or, serve it with some avocado toast or salmon toast for a more filling side dish.

Ingredients
- 1 ½ pounds ground breakfast sausage
- 1 red bell pepper, seeds removed, chopped
- 1 onion, chopped
- 3 cups frozen hash brown potatoes
- 2 cups shredded cheddar cheese
- 1 cup Bisquick baking mix
- 4 eggs
- 2 cups whole milk
- 2 Tablespoons maple syrup
- 1 teaspoon salt
- ½ teaspoon ground black pepper
Instructions
- Preheat your oven to 400ºF. Spray a 9×13 baking dish with baking spray and set aside.
- Heat a large skillet over medium-high heat. Add the ground sausage, chopped pepper, and chopped onion to the hot skillet. Cook for about 10 minutes, chopping the meat as it cooks so that it is small crumbles. The meat should no longer be pink, and the peppers and onions should be soft.1 ½ pounds ground breakfast sausage, 1 red bell pepper, seeds removed, chopped, 1 onion, chopped
- Remove the skillet from the heat and stir in the hash brown potatoes and 1 ½ cups of the cheese.2 cups shredded cheddar cheese, 3 cups frozen hash brown potatoes
- Scoop the sausage mix into the prepared baking dish and spread it into an even layer.
- In a seperate mixing bowl, whisk together the Bisquick, eggs, maple syrup, milk, salt, and pepper.1 cup Bisquick baking mix, 4 eggs, 2 cups whole milk, 2 Tablespoons maple syrup, 1 teaspoon salt, ½ teaspoon ground black pepper
- Pour the Bisquick mix into the casseorle dish.
- Bake the casserole, uncovered, for 40 minutes. The casserole should be golden brown, and a knife inserted into the center of the casserole should come out clean.
- Sprinkle the remaining ½ cup of cheese over the hot casserole and return it to the oven to bake for 3-4 more minutes just to melt the cheese.
- Serve while hot!
