Why this is the pasta salad I make all summer!

This summer pasta salad recipe is what I bring when I don’t know what to bring. Crisp cucumbers, sweet cherry tomatoes, tangy artichoke hearts, and salty feta get tossed with rotini and zesty Italian dressing — no oven, ready in about 20 minutes, and it actually tastes better after a night in the fridge. I’ve been making a version of this for potlucks and barbecues for over 15 years, and the bowl always comes home empty.

  • It’s made-ahead by design. The flavors need at least 30 minutes to meld — overnight is even better — so it’s done before your party starts.
  • It uses what the garden (or farmstand) is throwing at you. Cucumbers, peppers, tomatoes, fresh herbs.
  • It travels. No mayo means no cooler anxiety at the picnic table.

  • Rotini pasta – All those spirals grab the dressing. (Bow ties work too — see my Bow Tie Pasta Salad for that version.)
  • Cherry tomatoes – Sweetest tomato you can buy in summer; no chopping juice mess.
  • Cucumber – The crunch. English or Persian if you can — thinner skins, less water.
  • Bell pepper & red onion – Color and bite. Soak the onion in cold water for 5 minutes if you want it milder.
  • Artichoke hearts – The tangy little surprise that makes people ask for the recipe.
  • Feta – Salty and creamy; it seasons the whole bowl.
  • Fresh basil & parsley – Don’t skip these. Dried herbs belong in the dressing, not on top.
  • Italian dressing – Store-bought is fine, and I’ll die on that hill. Zesty style is best here.

Easy Variations

  • Use roasted vegetables like zucchini or eggplant, or steamed broccoli.
  • Go Greek: add kalamata olives, swap the artichokes for pepperoncini.
  • Make it Caprese: mini mozzarella balls instead of feta, extra basil.
  • Make it a main dish: add grilled chicken, salami, or chickpeas.
  • Make it dairy-free: skip the feta and add olives for that salty note.

How to Make Summer Pasta Salad

  1. Toss the ingredients: Combine all of the ingredients in a large bowl and toss to combine. Season to taste with salt and pepper.

  1. Chill: Place the bowl in the refrigerator and chill for at least 30 minutes before serving. 

What to serve with it

Anything off the gril – burgers, brats, Grilled Chicken Kabobs, BBQ Pulled Pork, or Crock Pot Ribs. How to Store

This salad can be stored in the fridge for up to three days. Simply keep it in an airtight container or wrap the bowl tightly with plastic wrap. When you’re ready to serve, give it a good stir to redistribute the dressing and enjoy! 

Recipe Tip:

Two things I never skip. I rinse the pasta cold — yes, it washes off some starch, but for a cold salad that’s the point; sticky starch is what makes pasta salad gluey. And I dress it twice — most of the dressing before chilling so it soaks in, the rest right before serving so it tastes bright instead of tired. I learned both the hard way!

Ingredients  

  • 1 lb dried rotini pasta cooked al dente
  • 2 cups arugula
  • 1 bell pepper diced
  • 1 red onion diced
  • 1 cucumber seeded and diced
  • 1 pint cherry tomatoes halved
  • 1 12oz jar artichoke hearts in water drained and diced
  • 1 cup feta cheese crumbled
  • cup basil finely chopped
  • cup parsley finely chopped
  • 1 ¼ cups Italian dressing Reserve ¼ of the dressing to toss in just before serving
  • salt and pepper to taste

Instructions 

  • Combine all the ingredients in a large mixing bowl and stir to combine. Season to taste. Chill for 30 minutes before serving.
