- 1 lb dried rotini pasta cooked al dente
- 2 cups arugula
- 1 bell pepper diced
- 1 red onion diced
- 1 cucumber seeded and diced
- 1 pint cherry tomatoes halved
- 1 12oz jar artichoke hearts in water drained and diced
- 1 cup feta cheese crumbled
- ⅓ cup basil finely chopped
- ⅓ cup parsley finely chopped
- 1 ¼ cups Italian dressing Reserve ¼ of the dressing to toss in just before serving
