Tips for Freezing Soups

One of the things my grandma used to do is make BIG batches of soup and freeze them for later. And now that I have my own family, I do the same thing. After all, if you’re making one batch of soup, it’s not that hard to double it and make extra!

Here are some tips for freezing soup:

  • Don’t freeze soups made with heavy cream. The cream can split, giving your soup an off-texture. If you’re planning a batch of soup for freezing and it’s made with heavy cream, simply don’t add the cream before freezing. Make the soup without the cream, freeze it, then add the heavy cream when you’re reheating it.
  • Let the soup cool before freezing. Don’t leave it out too long or it will spoil, but let it come to room temperature. If you put piping hot soup in the freezer, it will heat up anything near it, causing potential food safety issues.
  • Freeze it flat. I store soups in freezer bags so I can lay them flat in the freezer and stack them. It makes better use of precious freezer space!
  • Store for 2-3 months. Even longer storage is fine for many pureed soups, but 2 to 3 months is a good general rule of thumb for most soup recipes.
  • Thaw before reheating. This allows for much faster and more even reheating.
