The Best 7UP Pound Cake

Did you know that you can use soda for more than just quenching your thirst? Put it to use in a delicious cake instead! This 7UP Pound Cake is soft, moist, and full of flavor. Especially when you add my super yummy glaze on top.

One slice of this simple cake just won’t be enough. Thankfully, this recipe makes enough fo ten servings. As a result, there’s more than enough to feed a crowd and have leftovers to enjoy for several days!

Add your favorite toppings, or just pile on the whipped cream!

Ingredients for 7UP Pound Cake

For the Cake Batter:

  • 1 ½ cups butter – I use unsalted butter for this since I add salt.
  • 3 cups sugar
  • 5 large eggs
  • 2 teaspoons vanilla extract
  • 1 lemon, zested
  • 1 lime, zested
  • 3 cups flour – I use all-purpose flour, but cake flour also works.
  • ½ teaspoon salt
  • 1 cup 7UP soda – Any lemon-lime soda would work.
  • ¼ cup whole milk

For the Glaze:

  • 1 ½ cups powdered sugar – Also known as confectioners sugar.
  • 2 tablespoons 7UP soda
  • 1 tablespoon lemon juice – You could also use lime juice. Or, substitute lemon extract.

Variations

  • Change the flavor of this simple cake by changing the type of soda used. Orange soda would be a super fun option!
  • You can make your own Cream Cheese Frosting to add to the top of this recipe instead of the homemade glaze.
  • Feel free to incorporate add-ins like shredded coconut or chopped nuts.

Directions For How To Make 7UP Pound Cake

  1. Prepare: Preheat your oven to 375 degrees Fahrenheit. Grease a bundt pan or tube pan with baking spray. Then, dust it with flour, tapping out any excess. Set the pan aside.  
  2. Beat: Add the butter and sugar to a stand mixer fitted with a paddle attachment. Beat for about five minutes or until light and fluffy. Scrape down the sides of the bowl occasionally to make sure all the butter blends evenly.
  3. Add the eggs: Add the eggs, one at a time, mixing on low speed after each addition. 
  4. Add more flavor: Add the vanilla, lemon zest, and lime zest. Stir on low speed just to incorporate. 
  5. Add the flour: Add the flour and salt, and mix just until smooth.
  6. Stir in the soda: Mix in the milk and 7UP on low speed until the batter is smooth and thick. 
  7. Pour: Pour the batter into the prepared bundt pan, spreading it out evenly.
  8. Bake: Transfer the cake to the preheated oven, and bake for 70 minutes, letting the cake rise. A knife inserted into the center will come out cleanly when done. The top will also look golden brown, and the cake will pull away from the sides of the pan.
  9. Cool: Let the cake cool in the pan for about 20 minutes. Then, flip the cake out onto a plate. Let cool on a wire rack for another 30 minutes. 
  10. Make the glaze: Add all the ingredients to a medium mixing bowl, and whisk until smooth. Pour the glaze over the cake, letting it drip down the sides. Then, slice, serve, and enjoy!

Serving Suggestions

This 7UP Pound Cake recipe is perfectly tasty on its own. However, it also pairs fabulously with whipped cream or a scoop of vanilla ice cream!

How To Store + Freeze 7UP Pound Cake

  • Store leftover pound cake in an airtight container at room temperature for three to five days. Or, transfer it to the fridge for up to one week. Be sure to wrap it in plastic wrap so it stays fresh!
  • Freeze this pound cake for up to three months. Wrap each slice in plastic wrap, and transfer them to a sealable bag or airtight container before freezing. Thaw in the fridge overnight when you’re ready to eat.

Quick Tip

The biggest thing to remember is that you need to let this cake cool down before applying glaze or frosting. If you add the glaze too soon, it’ll melt into the cake!

Ingredients

Glaze Ingredients

  • cups powdered sugar
  • 2 Tablespoons 7UP soda
  • 1 Tablespoon lemon juice

Instructions 

  • Preheat your oven to 375ºF. Grease a bundt pan with baking spray, then dust it with flour. Set the pan aside. 
  • Add the butter and sugar to a stand mixer with a paddle attachment. Beat until light and fluffy, about 5 minutes, scraping down the sides of the bowl occasionally to make sure all the butter is evenly blended.
    1½ cups butter, 3 cups sugar
  • Add the eggs, one at a time, mixing on low speed after each addition.
    5 eggs
  • Add the vanilla, lemon zest and lime zest and stir on low speed just to incorporate.
    2 teaspoons vanilla extract, 1 lemon, 1 lime
  • Add the flour and salt and mix to make a smooth batter.
    3 cups flour, ½ teaspoon salt
  • Mix in the milk and 7UP on low speed until the batter is smooth and thick.
    1 cup 7UP soda, ¼ cup whole milk
  • Pour the batter into the prepared bundt pan and spread evenly in the pan.
  • Bake the cake in the preheated oven for 70 minutes. A knife inserted into the center of the cake will come out cleanly. The top will look golden brown and the cake will be pulling away from the sides of the pan.
  • Let the cake cool in the pan for about 20 minutes then flip the cake out onto a plate. Let cool for another 30 minutes.
  • Add all the ingredients for the glaze into a medium mixing bowl and whisk together. Pour the glaze over the cake then slice and serve.
    1½ cups powdered sugar, 2 Tablespoons 7UP soda, 1 Tablespoon lemon juice
