We love a good dessert in our household. I’m pretty sure it was my mom’s love of all things sweet that gave me my sweet tooth! Being from West Virginia, meals weren’t complete without a dessert to top it off!

From simple chocolate chip cookies to homemade bread puddings and layered chocolate cakes, dessert was a staple in our home. As much as I want a dessert after every meal, my waist does not. Ha! BUT when I can whip up something light and good for you at the same time that satisfies my sweet tooth, I’m all in! One of my favorite desserts is this simple Pound Cake with Fruit and Whipped Cream.

Oh yum! This is much easier to make than it looks! I didn’t spend hours baking a pound cake (although you could make my Cream Cheese Pound Cake or Buttermilk Pound Cake if you want!), cutting up fruit and whipping up whipped cream from scratch. Nope! I bought everything at the store and just assembled it after dinner. And to make it even easier, I used Welch’s NEW Frozen Fruit Tropical Blend for my fruit layer, pound cake from the bakery at the grocery store and whipped cream from the frozen section. That’s it!

I don’t feel so guilty having a “healthier” dessert like this Pound Cake with Fruit and Whipped Cream after dinner every once in a while. The fruit is good for you and I know that it’s the freshest it can be! That is a good thing in this mom’s book!

    Hi Casey,
    For a box cake, can you add butter milk instead of whole milk to replace the amt of water needed? If I use buttermilk, how much oil should i use? Can I also use melted butter instead of oil, along with using the buttermilk?

      YES! I think buttermilk is a good idea!! Melted butter is good, too. Not sure of the measurements. Maybe google it?
