Easy Taco Soup Recipe

As the temperature drops, I like to bring out all the soup recipes I can find! Some of my favorite Crock Pot Meals are Homemade Chicken Noodle SoupButternut Squash, Crock Pot Chicken Tacos, and this Easy Taco Soup Recipe!

This low-fat, hearty soup is full of flavor is perfect for cold nights. Even the kids love it! Slow cooker soup recipes are great for busy nights and this is one of the best crockpot recipes!

How Do You Make Taco Soup?

Full of easy-to-find and affordable soup ingredients like hamburger, beans, corn, tomatoes, taco seasoning, and ranch dressing seasoning – this soup packs a big flavor punch that will warm you up right away!

Just add all of your ingredients to a slow cooker or dutch oven on the stovetop, heat, and serve! That’s it!

Making this soup ahead of time in the slow cooker is perfect for busy days. All you need to do is brown the hamburger in a skillet and then add all of the ingredients to a slow cooker to simmer.

As an alternative,  you can leave this Taco Soup on the stove in a dutch oven. It’s up to you! Just make sure to cook for about an hour or more to let all the flavors mingle together for a big bowl of yummy goodness!

What Ingredients Go In Taco Soup?

  • Hamburger – You can swap out for ground turkey if you want to lower the fat content.
  • Beans – Any flavor of beans will work!
  • Corn – Canned sweet corn adds a nice pop of flavor.
  • Taco seasoning – packaged or make your own homemade taco seasoning!
  • Ranch dressing
  • Tomatoes
  • Mexican-style tomatoes

Substitutions

  • Ground turkey or ground chicken – You can use other meat besides beef for this simple taco soup.
  • herbs and spice – adding in garlic powder, onion powder, and possibly even some cumin are all good ingredients that you can use, too

How To Make Taco Soup

  1. Brown the Beef. In a large pot, brown the ground beef over medium-high heat until fully cooked, about 5-7 minutes. Drain any excess grease from the pot.
  2. Sprinkle the taco seasoning and ranch dressing seasoning over the browned beef. Stir well to coat the beef with seasoning.
  3. Add the black beans, kidney beans, corn, Rotel tomatoes, diced tomatoes (with their juice). Stir to combine. Cover the ingredients with water.
  4. Bring to a simmer. Reduce the heat to low and let the soup simmer for 20-30 minutes, stirring occasionally. This allows the flavors to blend beautifully. (Here’s how to make Slow Cooker Taco Soup.)
  5. Ladle the soup into bowls and add your favorite toppings like shredded cheese, sour cream, tortilla chips, or diced avocado for extra flavor and texture.

Storage, Reheating, and Freezing Instructions

To Store:

  • Refrigerator: Allow the soup to cool completely, then transfer it to an airtight container. Store in the refrigerator for up to 4 days.

To Reheat:

  • Stovetop: Pour the soup into a pot and warm over medium heat, stirring occasionally, until heated through.
  • Microwave: Transfer a portion of soup to a microwave-safe bowl, cover with a microwave-safe lid or paper towel, and heat in 1-minute intervals, stirring in between, until hot.

To Freeze:

  • Freezing: Let the soup cool completely, then portion it into freezer-safe containers or heavy-duty freezer bags (lay bags flat in the freezer for easy stacking). Freeze for up to 3 months.
  • To Reheat from Frozen: Thaw overnight in the refrigerator or place the frozen soup in a pot and warm over low heat, stirring occasionally, until thawed and heated through.

What To Serve With Taco Soup?

Make sure to add LOTS of toppings to your Taco Soup. It sure makes it delicious! We like to add tortilla chips and bread to the side to eat with our soup.ย Hotdogs are also a good choice for the kids!

How do you thicken Taco Soup?

Add Cornstarch or Flour Slurry:
Mix 1-2 tablespoons of cornstarch or flour with an equal amount of cold water until smooth.
Stir the mixture into the soup and let it simmer for 5-10 minutes until it thickens.
Mash Some of the Beans:
Use a potato masher or the back of a spoon to mash some of the beans directly in the pot. This will release starches that help thicken the soup without adding additional ingredients.
Add Creamy Ingredients:
Stir in a bit of sour cream, heavy cream, or shredded cheese at the end of cooking. These ingredients will add richness and help thicken the soup as they melt.
Let It Simmer Longer:
Simply simmering the soup uncovered for a longer period will naturally reduce and thicken the liquid. Stir occasionally to avoid sticking.
