I developed a bad habit a few years ago—every day after school drop off, I’d swing by Starbucks for a little somethin’-somethin’.

But if you have a Starbucks habit, you know: that somethin’-somethin’ can add up fast. Those drinks are expensive! And that’s why I started making a homemade version of my favorite Pumpkin Spice Cold Brew.

  • Everything you love about the original: This copycat pumpkin cold brew brings together smooth cold brew coffee, a little autumn-spiced sweetness, and a frothy foam on top.
  • Budget-friendly: Friends, you will save SO much money DIYing it rather than hitting up the drive-thru everyday. (And no waiting for the 10 cars in front of you to place their orders either!)
  • Just FOUR ingredients: Okay, five if you count the Baked Pumpkin Spice Donut. (That’s optional, but highly recommended.)

  • Cold brew coffee – Use your favorite bottled or homemade cold brew. Cold brew gives you a smoother, less acidic base than regular iced coffee—perfect for layering flavors.
  • Pumpkin spice syrup – A nice little shortcut over homemade syrup that sweetens and flavors the coffee.
  • Milk – This is used to make the cold foam.
  • Pumpkin pie spice and donut – For garnish, if desired. If you don’t have pumpkin pie spice you can use ground cinnamon. You can omit the spices, if needed, but they help create that authentic flavor.

Variations

  • Make it dairy-free: Swap in any non-dairy milks like almond, soy, oat or coconut milk.
  • Give it a caffeine boost: Add a shot of espresso for a little extra pep in your step.
  • Add caramel drizzle: Elevate the flavor and drizzle a bit of caramel sauce on the side of the glass before adding the cold brew. The drink will taste sweeter.
  • Use store-bought cold foam: Then you won’t need to wash your blender. If you can find pumpkin cream, that is even better!

How to Make Pumpkin Spice Cold Brew

It is so easy to make your favorite Starbucks coffee shop drink at home.

  1. Get started: Fill a glass with ice and add the syrup. I like to use a mason jar.

  1. Add the coffee: Pour in enough cold brew to cover the ice. Stir.

  1. Make the foam: Blend the milk in a high-powered blender until it’s foamy, then add it on top of the cold brew. Alternatively, you can froth the milk in a cup with a milk frother.

  1. Finish: Sprinkle the pumpkin spice on top, then add a straw and pumpkin spice donut.

Frequently Asked Questions

Can I use regular iced coffee in my Pumpkin Spice Cold Brew?

Yes, you can! Just note that cold brew is smoother and less acidic than regular coffee.

Can I use canned pumpkin puree to make pumpkin cold brew?

I don’t recommend it. I know some homemade pumpkin spice coffee recipes include pumpkin puree, but the Starbucks version does not. I think it adds an unpleasant texture and flavor to a cold brew coffee.

What milk works best for cold foam?

You can use heavy cream or half-and-half, but I usually use whole milk since I have it on hand in the fridge and it’s not as heavy.

How long does cold brew coffee with cold foam last in the fridge?

Once assembled, you should drink this pumpkin spice cold brew right away. While it will keep in the fridge for a day, the foam is likely to mix into the coffee.

Pumpkin Spice Cold Brew

Make your own Pumpkin Spice Cold Brew with Cold Foam at home! This easy 4-ingredient recipe is the perfect Starbucks copycat.

Ingredients  

  • 1 cup cold brew coffee
  • 1 ounce pumpkin spice syrup (I use Torani)
  • ¼ cup milk
  • 1 pinch pumpkin pie spice
  • 1 pumpkin spice donut (optional)

Instructions 

  • Fill a glass with ice and pour in the pumpkin spice syrup.
  • Pour enough cold brew coffee into the glass to completely cover the ice.
  • In a blender, add 1/4 cup of milk and blend on high for about 30 seconds until it forms a foam.
  • Add the cold foam to the cup and top with a sprinkle of pumpkin pie spice.
  • Then, for a little fun, add a pumpkin spice donut to your straw and serve!

Notes

  • Ice cube trick: Freeze some cold brew in ice cube trays so when you serve the drink, it doesn’t get watered down as the ice melts.
  • Caramel drizzle: If you’d like, drizzle caramel syrup over the cold foam just before serving.
  • Keep it cold: Chill your glass beforehand so the cold brew stays at the perfect temperature.
