My kids are snackers. They would much rather have a paper plate full of carrots, celery, fruit, cheese and goldfish, than anything else. Sometimes it drives me crazy, other times, it’s a blessing because I don’t have to worry about fixing a huge meal on busy week nights. But, I get bored of just giving them the same things all the time, so I came up with an easy solution to snack time on Pancake Breakfast day –
Pancake Crepes with Peanut Butter, Honey and Bananas. Mmmmm….mom even had to sneak a few bites of these guys in! Very simple to make by using the left-over pancake batter from breakfast to make crepes!
Thin out the batter with a little milk, add to skillet and cook on each side until lightly brown. Spread with peanut butter & honey and top with bananas. Roll up and cut into small bite size pieces. Fun, inexpensive and very easy to make! You could add other toppings such as: chocolate chips, whipped cream and more! I guess it wouldn’t be as healthy, but the kids would love it!

I love crepes. I love French food. I love the combination of pb, honey, and bananas. Now that all of these things are combined I don’t quite know what to do except leave work ASAP so I can make some o’ these ๐
