Don’t just reach for any old bread you have on hand, bread textures matter when it comes to french toast. This is the biggest area of failure. You reach for that basic white slice of bread and end up with a soggy and messy so-called french toast.

Sturdy bread is the way to go. Soft and delicate bread will fall apart in the egg and milk mixture. Buying loaves of bread you are able to slice to fit your consistency is great as well. That way you can choose how thick your slice needs to be. Here are some of the most popular pieces of bread to use for french toast.

  • Challah
  •  Brioche
  • French Bread
  • Pullman Loaf

Day old bread is also a great option. This helps dry the bread out so when you put it in the milk/egg mixture it has more room to soak up before it turns to mush. If you want that day-old bread quickly just turn your oven on to 250 degrees and bake for 5-10 minutes or until it begins to dry up a bit. Then dip in egg/milk wash and continue cooking your french toast as you would.

Try Cooking With Oil

Many use butter as the base to seasoning the pan before you drop your french toast down to cook. It is very easy to burn or char your french toast if your heat is too high. Consider using a tiny dab of cooking oil like canola or vegetable in replace of the butter. It will still give you that golden brown look without taking away flavor.

I count this good for two slices of bread. This ratio gives you a great consistency and will help your french toast cook up well.

Play with Flavors

If you use strictly milk and eggs and nothing else, try changing it up. A sprinkle of cinnamon in the wash or vanilla adds different levels of flavor. Or take it to a new level of sweetness with powdered sugar. The powdered sugar dissolves but gives a nice sweet element. While brown sugar will give you that caramelized taste. Be open to adjusting your egg/milk mixture to add depth and flavor to your french toast.
