I’m all about quick, easy and delicious food. The easier and healthier, the better. One of our favorite kid AND adult friendly lunches is English Muffin Pizzas. It can’t get a lot easier or quicker then these little good for you guys. The kids love them and you don’t have to feel guilty about popping a frozen pizza in the oven and calling it a healthy lunch.

The next time you’re looking for something healthy to curb your carb craving, try these good for you pizzas!

I like to line my baking sheet with foil to add to easy clean-up. Remember – it’s the little things you do to make life easier that makes it more enjoyable!

Line the baking sheet with English Muffins, face down. (You can also do something similar with French bread and make French bread pizzas!) Pop under the broiler to toast the outside for a couple of minutes. Make sure to keep an eye on them so they don’t burn.

Remove from oven and flip over to begin adding toppings. I like to use any old pasta or pizza sauce I have in my fridge or pantry. My favorite is Ragu Italian Sausage flavor. I use it for about everything! It’s my favorite for spaghetti, little pizzas and just on top of pasta for a quick dinner.

Add a tablespoon or so of sauce to the English Muffin and top with your favorite shredded cheese. You can get creative and add whatever toppings you’d like as well! Make it fun and let your child help you with this part! Ham, pineapples, pepperoni, green peppers – whatever you like. Today we’re going simple and just having cheese.

Pop back in the oven under the broiler for a few minutes to melt the cheese.
