It’s no secret that I need to lose a few pounds. Up and down, up and down…Story of my life!
So, this week I’m trying really hard to make better decisions and not have so much Halloween candy.
One of my favorite, light lunches is this easy and yummy Pita Pocket Salad.
You can’t tell from the picture – but this little guy is stuffed with protein packed cottage cheese, pineapples, salad, light Ranch dressing and then a little shredded cheese. You could leave the cheese off – but hey, everything is better with a little cheese!
It may sound a little weird, but I’m telling you – it’s VERY good!
I cut my pita bread in half, brown a little in the toaster and then pack it full in the order listed above.
Try it! I’m sure you’ll like it and be full for a few hours.
