This recipe was shared for Energy Balls – also known as Protein Balls or Little Bites of Heaven, as I like to refer to them as! I L.O.V.E this recipe! It’s so versatile Add whatever you have in your pantry mixed in with the base of Oats, Honey, and Peanut Butter (or any other nut butter you like) and you’re good to go!
On this day, I used oats, honey, peanut butter, rice krispies, coconut and mini non-diary chocolate chips (since I can’t have dairy with Sydney’s dairy sensitivity). They were sooooooo good! I couldn’t have just one. I had more like 3 or 4. Make them big or small. Sweet or salty. It’s up to you! Here’s a recipe I bet you’ll be making several times very soon!
- 1 cup oatmeal
- 1 cup coconut
- 1 cup rice krispies
- 1/2 cup peanut butter
- 1/4 cup chocolate chips
- 1/3 cup honey
- 1 tsp vanilla
- optional 1/4 of other mix-ins or more!
- Mix all ingredients in a bowl together until thoroughly combined
- Chill in fridge for about 30 mins
- Remove and form into 1 inch balls
- Chill in fridge for up to 1 week
