I’ve loved the easy, breezy, light meals of summer, but if I’m being honest…I’m ready for some comfort food! I love when Fall comes and we can enjoy soups, stews, crock pot meals and casseroles full of rich goodness. I can’t help it.
I’m partial to our family favorite recipes that bring me back to being younger. One dish I loved growing up that my mom would make all the time, summer or fall, was Broccoli Casserole! It was always one of my favorites.
I still make it for my family. It’s a great dish to take to a family gathering or pot luck. Super easy and only a few ingredients, which makes this Broccoli Casserole the perfect side dish for back to school nights!
I think one of the things that makes this dish so yummy is the cheese! I mean, who doesn’t LOVE cheese on their broccoli?! I think it’s a rule that you have to have cheese on your broccoli, whether it’s roasted broccoli or steamed broccoli. Period.

So, I’m excited to share my Mom’s Broccoli & Rice Casserole with you today that’s made with Crystal Farms Cheese! I hope you enjoy it as much as my family does! Broccoli & Rice Casserole
Ingredients
- 2 10-ounce packages frozen chopped broccoli, cooked and drained
- 1 cup grated sharp cheddar
- 1 10 3/4-ounce can condensed cream of mushroom soup
- 1 cup instant rice
- 2 cups crushed crackers
- 2 tablespoons butter melted
Instructions
- Preheat oven to 350 degrees F.
- Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.
- In a large mixing bowl, combine broccoli, rice, cheese, and soup
- Mix well with a metal spoon. Place the mixture in the prepared baking dish.
- Top with the crushed crackers and pour the melted butter evenly over the crackers.
- Bake for 35 minutes or until set and browned.

My family loves spicy macaroni n cheese n sausage casserole. I don’t have a recipe. it’s just something my mom made so I’ve been making it for years, too. Sometimes I add broccoli also.

We love marinated chicken on the grill along with grilled veggies. Weber makes a great lemon pepper marinade (in a pouch) that we use a lot. Then grill the chicken along with some asparagus and some red potatoes. Yum!

Homemade macaroni and cheese

Our favorite dish is baked mac and cheese. We like to ooze it up with loads of cubed cheese mixed in, then complemented with copious amount of shredded cheese just to make sure we didn’t miss any spots:-) I’ve found that using almond milk instead of regular milk gives it a silky texture as well, which is an added bonus!
