I’ve loved the easy, breezy, light meals of summer, but if I’m being honest…I’m ready for some comfort food! I love when Fall comes and we can enjoy soups, stews, crock pot meals and casseroles full of rich goodness. I can’t help it. I’m partial to our family favorite recipes that brings me back to being younger. One dish I loved growing up that my mom would make all the time, summer or fall, was Broccoli Casserole! It was always one of my favorites. I still make it for my family. It’s a great dish to take to a family gathering or pot luck. Super easy and only a few ingredients, which makes this Broccoli Casserole the perfect side dish for back to school nights!
I think one of the things that makes this dish so yummy is the cheese! I mean, who doesn’t LOVE cheese on their broccoli?! I think it’s a rule that you have to have cheese on your broccoli. Period.

Broccoli & Rice CasserolePrint Pin Rate
- 2 10-ounce packages frozen chopped broccoli, cooked and drained
- 1 cup grated sharp cheddar
- 1 10 3/4-ounce can condensed cream of mushroom soup
- 1 cup instant rice
- 2 cups crushed crackers
- 2 tablespoons butter melted
- Preheat oven to 350 degrees F.
- Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.
- In a large mixing bowl, combine broccoli, rice, cheese, and soup
- Mix well with a metal spoon. Place the mixture in the prepared baking dish.
- Top with the crushed crackers and pour the melted butter evenly over the crackers.
- Bake for 35 minutes or until set and browned.
