One of my favorite things to do when the kids are in bed and all of my “mom duties” are done for the day is to watch a little TV while checking in on Facebook and Instagram. I really only watch two channels – HGTV and The Food Network. I just LOVE all the brilliant ideas I get from the shows. (and my husband does, too! haha!)  One we love to watch together is “Chopped“. I would TOTALLY rock at that show! AND I just got the chance to with this “Chopped at Home” challenge!

Chopped Ingredients

I was asked by the folks at Chopped and Sargento to come up with a dish using the following ingredients:

Kale
Bacon
Oyster Crackers
Sargento Cheese – 4 State Cheddar

I have this in the bag! I LOVE all of these ingredients! The first thing that came to mind that was inline with how I cook at home, was to make a kale salad with a delicious, good for you dressing! It was perfect!

And, let me tell you it was the bomb! I loved this salad! And it was simple to make. Fresh ingredients that are good for you. You can’t go wrong!

I have to say that my favorite thing about this salad was the Sargento 4 State Cheddar Cheese crisps. They gave the salad a ton of flavor and crunch. I love a good salad but I want it to have a good flavor. These crisps did just that! Try making them for yourself at home. They’re super easy to make! But be warned – your family will keep walking by and grabbing them before you have your salad all put together. They are a pretty good snack!

This Kale Salad with bacon and cheddar cheese crisps is good for you and delicious!

 

Kale Salad with Cheese Crisps

Ingredients  

  • 2 cups Kale
  • 1 Slice Bacon - cooked and crumbled
  • Oyster Crackers
  • Sargento 4 State Cheddar Cheese
  • 2 Tbs Olive Oil
  • 1 Tbs Balsamic Vinegar

Instructions 

  • Add Kale to a large salad bowl
  • Top with bacon, oyster crackers, cheese crisps and dressing.
  • Serve immediately.
  • To make cheese crisps, add small pinches of cheese to a hot skillet. Allow to cook until the cheese is melted and starts to slightly brown. Remove from skillet and place on a paper towel to cool and crisp.
  • To make dressing - mix olive oil and balsamic vinegar together in a jar. Shake to combine.
