7UP Pound Cake

Make this 7UP Pound Cake from scratch with simple ingredients including soda, lime zest, and lemon zest for a tender, refreshing cake full of classic lemon-lime flavor!

1 ½ cups butter 3 cups sugar 5 large eggs 2 teaspoons vanilla extract 1 lemon, zested 1 lime, zested 3 cups flour ½ teaspoon salt 1 cup 7UP soda ¼ cup whole milk

CAKE INGREDIENTS

1 ½ cups powdered sugar 2 tablespoons 7UP soda 1 tablespoon lemon juice

GLAZE INGREDIENTS

Beat butter and sugar for about 5 minutes. Add the eggs, one at a time. Add the vanilla, lemon zest, and lime zest. Stir on low speed just to incorporate.

Add the flour and salt, and mix just until smooth. Mix in the milk and 7UP on low speed. Pour the batter into the prepared bundt pan.

Bake for 70 minutes. Let cool in the pan for about 20 minutes. Then, flip the cake out onto a plate. Let cool on a wire rack for another 30 minutes.

Whisk the glaze ingredients until smooth. Pour the glaze over the cake, letting it drip down the sides. Then, slice, serve, and enjoy!
