Lemon Pound Cake

This moist and zesty Lemon Pound Cake with sweet lemon glaze proves that you can make a sophisticated dessert with pantry-staple ingredients!

3 ¼ cups flour ½ teaspoon baking soda ½ teaspoon salt 1 cup buttermilk 2 lemons 1 teaspoon vanilla extract 1 cup butter 2 cups sugar 3 eggs 1 cup powdered sugar  2 tablespoons lemon juice

INGREDIENTS

Preheat oven and prepare pans. Whisk buttermilk, lemon zest, and lemon juice. Whisk flour, baking soda, and salt in a separate bowl.

Cream the butter and sugar until light and fluffy. Add the eggs one at a time, stirring to combine. Then, stir in the vanilla.

Add ~1/3 of the flour mixture to the butter mixture. Stir until smooth. Add 1/2 the lemon buttermilk, stir again. Repeat until all the ingredients combine.

Bake for one hour. Allow to cool in the pans for 10 mins. Invert onto a cooling rack to cool completely.

Whisk the powdered sugar and lemon juice in a bowl until smooth.

Pour the glaze over the cooled cakes, letting it drip down the sides. Let set for about 30 mins. Slice the pound cakes, and enjoy!
