- 8 Tablespoons unsalted butter, softened
- ½ cup dark brown sugar
- ½ cup granulated sugar
- 1 egg
- 1 ½ Tablespoons vanilla extract
- 1 ½ cups all-purpose flour
- ¾ teaspoon baking soda
- 2 teaspoons cornstarch
- ½ teaspoon salt
- 1 ½ cups chocolate chips
Gather your ingredients. Preheat the oven to 350°F.
Mix the wet ingredients. In a bowl, cream together the butter, dark brown sugar, and granulated sugar using an electric mixer for about 1 minute. Scrape down the sides of the bowl to ensure everything is well blended. Add the egg and vanilla, and mix again until smooth.
Combine the dry ingredients. In a separate large bowl, whisk together the flour, baking soda, cornstarch, and salt. Gradually add the dry mixture to the wet mixture, stirring until a thick cookie dough forms. Be careful not to overmix, as this can make the cookie tough.
Add the chocolate chips. Stir in the chocolate chips by hand until evenly distributed.
Prepare the skillet. Spread the cookie dough evenly in a 12-inch oven-safe skillet. The dough will be thin but will puff up as it bakes.
Bake for 20-22 minutes, or until the cookie is golden brown but still gooey in the center.
- Make sure the skillet you use is oven-safe. It should not have a plastic handle or any type of metal coating that will melt in the oven. Cast iron skillets are my favorite choice.
- Pull the skillet cookie out when it’s just golden around the edges but still a little soft in the middle. It’ll continue to cook as it cools, which will ensure the center is soft and chewy.
- Once you add the dry ingredients, stir until just combined. Overmixing can make the cookie tough instead of chewy.
- Sprinkle a little sea salt over the top of the cookie dough before baking to make the flavor really pop.
