- 2 cups cooked chicken, chopped into 1 inch pieces (use leftover rotisserie chicken or buy 4 grilled Chick-Fil-A chicken breasts)
- ⅓ cup sweet pickle relish
- ½ cup mayonnaise
- 2 stalks celery, chopped into ½-inch pieces
- 2 hard-boiled eggs, chopped into ½-inch pieces
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- 1 tablespoon fresh dill, minced
To Assemble
- 8 slices whole wheat bread, toasted
- 4 leaves romaine or whole leaf green lettuce
- 8 sandwich toothpicks or bamboo skewers
In a mixing bowl, stir together all ingredients until well combined. Adjust the seasoning with more salt and pepper, if desired.
To assemble, spoon an even amount of the chicken salad on 4 slices of the toasted bread. Top with a slice of the lettuce then the remaining slice of bread. Cut each sandwich in half diagonally, then pierce through the middle with a sandwich toothpick or bamboo skewer.
