- ¼ cup olive oil
- 2 Tablespoons red wine vinegar
- 1 ½ teaspoons kosher salt
- ½ teaspoon black pepper
- 2 Tablespoons fresh basil, chopped
- 2 Tablespoons fresh parsley, chopped
- 2 English cucumbers, thinly sliced
- 2 cups grape tomatoes, halved
- ½ red onion, thinly sliced
In a large mixing bowl, whisk together the olive oil, vinegar, salt, pepper, basil and parsley.
