These lemon muffins are my current favorite muffin recipe—they’re light, fluffy, and full of bright citrus flavor.
Butter White granulated sugar All-purpose flour Eggs Milk Lemon juice Baking powder Baking soda Salt Lemon zest Vanilla extract Lemon extract
Mix sugar, olive oil and eggs until they are smooth. Add milk and lemon juice to the mixture and stir.
Mix together the dry ingredients. Add the wet ingredients and mix on low until everything is combined. Stir in the lemon zest.
Pour the batter into muffin tins. Bake the muffins for 12 minutes or until a toothpick inserted into the center comes out clean.
Combine all of the ingredients to make the glaze. Then, use a spoon or fork to drizzle it over the muffins.
