Christmas Pinwheel Cookies

These Christmas Pinwheel Cookies might just be the most festive cookies you’ll make this holiday season!

All-purpose flour Baking powder Salt Unsalted butter Granulated sugar Large Egg Pure vanilla extract Almond extract Red food coloring Green food coloring

INGREDIENTS

Cream the butter and sugar in a large mixing bowl until it’s light and fluffy. Then, beat in the egg, vanilla, and almond extract.

Whisk the flour, baking powder, salt, and baking soda. Slowly add the dry mixture to the wet mixture, beating until combined.

Divide the dough into three portions. Leave one portion in the bowl, and place the other two portions in two separate bowls.

Use food coloring to tint one portion red, one portion green, and leave one portion plain.

Remove the waxed paper, and layer the dough with red on the bottom, followed by white, and then green.

Roll the dough tightly jelly-roll style, starting with the long side, to form a log. Wrap in plastic, and refrigerate for 2 hours or until firm.

Preheat the oven. Unwrap the dough, and place it on a cutting board. Cut the dough into 1/4-inch slices, and transfer the pieces to ungreased baking sheets.

Bake for 9 to 11 minutes or until the edges are set, and carefully transfer the Christmas pinwheel cookies to wire racks to cool.
