- 2 cups fresh strawberries divided
- 2/3 cup boiling water
- 1 3 oz package JELL-O strawberry flavor gelatin
- ice cubes
- 1/2 cup cold water
- 8 oz Cool Whip whipped topping thawed
- 1 6 oz ready-to-use graham cracker crumb crust
Slice 1 cup strawberries; refrigerate for later use.
Chop remaining strawberries; set aside.
Add boiling water to gelatin mix; stir 2 min. until completely dissolved.
Add enough ice to cold water to measure 1 cup.
Add to gelatin; stir until slightly thickened. Remove any unmelted ice.
Fold in cool whip to the gelatin mixture.
Stir in chopped strawberries. Refrigerate 20 to 30 min. or until mixture is very thick and will mound. Spoon into crust.
Refrigerate for 6 hours or until firm. Top with additional cool whip and sliced berries just before serving.
- Let the Cool Whip thaw completely before mixing.
- Stir the gelatin until fully dissolved to avoid grainy texture.
- Remove any unmelted ice cubes before adding the Cool Whip.
- Chill the filling until thickened before adding it to the crust.
- Make the pie no more than one day ahead for the freshest results.
