- 2 medium zucchini
- 2 large eggs
- ¾ cup all-purpose flour
- ½ cup parmesan cheese grated
- 2 cups bread crumbs seasoned
- vegetable oil for frying
- salt & pepper to taste
- marinara sauce or ranch for dipping
Slice zucchini into ½” slices.
Beat eggs with salt and pepper. In a separate shallow dish, mix together the cheese and breadcrumbs and in another, mix the flour with some salt and pepper.
Add oil to a heavy saute pan and heat over medium-high heat.
Dredge the zucchini slices first in the flour, then the egg, and lastly the breadcrumbs. Gently drop the breaded zucchini slices into the oil and cook for 2-3 minutes per side.
Drain fried slices on paper towels. Season with salt and pepper.
