Fried Zucchini

Ingredients

  • 2 medium zucchini
  • 2 large eggs
  • ¾ cup all-purpose flour
  • ½ cup parmesan cheese grated
  • 2 cups bread crumbs seasoned
  • vegetable oil for frying
  • salt & pepper to taste
  • marinara sauce or ranch for dipping

Instructions

  • Slice zucchini into ½” slices.
  • Beat eggs with salt and pepper. In a separate shallow dish, mix together the cheese and breadcrumbs and in another, mix the flour with some salt and pepper.
  • Add oil to a heavy saute pan and heat over medium-high heat.
  • Dredge the zucchini slices first in the flour, then the egg, and lastly the breadcrumbs. Gently drop the breaded zucchini slices into the oil and cook for 2-3 minutes per side.
  • Drain fried slices on paper towels. Season with salt and pepper.
