Easy Tater Tot Casserole

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cups frozen mixed vegetables (optional)
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup sour cream
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 1 bag (32 oz) frozen tater tots

Instructions

  • Preheat your oven to 375°F.
  • In a large skillet, cook the ground beef and onion over medium heat until the beef is browned and the onion is softened. Drain any excess grease.
  • Stir in the cream of mushroom soup, sour cream, garlic powder, salt, and pepper. If using frozen mixed vegetables, stir them in now.
  • Transfer the beef mixture to a greased 9x13-inch baking dish and spread it into an even layer.
  • Sprinkle 1 cup of shredded cheddar cheese over the beef mixture.
  • Arrange the frozen tater tots in a single layer on top of the cheese.
  • Bake in the preheated oven for 35-40 minutes, or until the tater tots are golden brown and crispy.
  • Remove from the oven and sprinkle the remaining cheddar cheese over the tater tots. Return to the oven for 5 minutes, or until the cheese is melted.
  • Serve hot and enjoy!

  • Let it rest: A 5–10 minute rest helps it slice cleanly.
  • Drain off the excess grease: You don't want a soggy, greasy casserole!
