- 2 racks country ribs
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp smoked paprika
- 2 tsp kosher salt
- 1 tsp black pepper
- ½ tsp cumin
- 1 tsp chili powder
- ¼ cup brown sugar
- 1 tsp dried oregano
- 1 cup chicken stock
- 2 tbsp apple cider vinegar
- 1 ½ cups BBQ sauce
Preheat the oven to 250F. Peel off the tough membrane from the boney side of the ribs and discard.
Combine the garlic powder, onion powder, paprika, salt, pepper, cumin, chili powder, brown sugar, and oregano in a small bowl and stir to combine. Cover the ribs with the spice mixture and refrigerate for 1 hour or overnight.
In a roasting pan, combine the chicken stock and vinegar. Add the ribs and cover the pan tightly with foil. Bake for 2 hours. Remove the ribs from the pan and transfer the leftover stock to a small saucepan. Bring to a boil and reduce by half. Add the BBQ sauce and set aside.
Preheat a grill to medium high. Grill the ribs for 5-6 minutes on each side or until slightly charred. Cut into individual ribs and toss in a bowl with the sauce.
