- 1 sheet puff pastry thawed but still cold
- 1 wheel of brie 8 to 14 ounces
- ¼ to ½ cup cranberry sauce or other jam/preserve of your choosing
- 1 egg
To serve
- Sliced baguette or crackers
Preheat the oven to 400 F.
Lay out the sheet of puff pastry onto a floured countertop or large cutting board. Using a knife or pizza cutter, trim the pastry into a square roughly twice the size of your wheel of brie. Place the brie on the center, then cover the top of the cheese with the cranberry sauce. Depending on the size of your wheel, you may not use the full ½ cup.

Wrap the pastry around the sides of the cheese, pressing the corners together at the top to seal completely. Move to a parchment lined sheet pan.
With a fork, mix together an egg wash with the egg and a small splash of water. Using a pastry brush, coat the outside with a thin layer, making sure to get into the corners.

Bake for 40 to 50 minutes, until the dough is cooked through and it has a golden brown color. Let cool for 8 to 10 minutes before serving with sliced baguette or crackers.
